Filled my soul with nature (and gluten-free donuts) on a winter weekend trip to Denmark Kwoorabup to visit my BFF at her new house.

Hope you are all enjoying the special beauty & coziness of this Makuru season, despite the usual viruses going around.

Hello to all the porridge people!

Why you should wean yourself off full oats:

1. Oats contain a protein called avenin which is almost identical to gluten, ie. big and hard to digest, which can cause inflammation in the gut

2. Oats are mostly carbs. Replacing some oats with things that contain protein and/or good fats - like almond meal, desiccated or shredded coconut, linseed meal, chia seeds, cashew butter, quinoa, collagen - is really good for evening out energy levels.

3. The above is especially true if you are using "quick oats" as they will be digested and turned into sugar even faster than regular oats.

It is especially ESPECIALLY true if using flavoured sachets which will contain actual sugar.

Consider using steel-cut oats which have a lower glycaemic index than both rolled and quick oats.

4. If you are going to use oats, use organic. Like most crops in Australia they are heavily sprayed during growth and storage.

5. Using things like nuts and coconut give your porridge a more rich finish, which means you can also use less cow's milk (yay) and more water.

Topping your porridge with berries is a great way to add even more nutrients. And a tiny bit of coconut sugar / xylitol / rice malt syrup / maple syrup / raw honey is fine. You can always do a sprinkle of cinnamon to balance that out.

You can pre-mix and pre-soak your power porridge to make cooking quicker in the morning.

This is also a perfectly acceptable lunch or dinner!
