Easy Crispy Chicken Katsu πͺ Recipe below!

Ingredients
Serves 4
β’ 1Β½ cups jasmine rice
β’ 600g chicken breasts, boneless and skinless
β’ 60g plain flour
β’ 2 eggs, beaten
β’ 100g panko breadcrumbs
β’ 4 tbsp canola oil, for frying
β’ 1 carrot, julienned
β’ 1 cucumber, thinly sliced
β’ 1 avocado, sliced
β’ Β½ handful fresh coriander, chopped
β’ 1 tsp sesame seeds, to garnish
Teriyaki Coconut Sauce
β’ 1 tsp sesame oil
β’ 1 clove garlic, crushed
β’ 1 spring onion, finely sliced
β’ 100ml Niulife Teriyaki Extra Thick Coconut Amino Sauce
β’ 2 tbsp water
β’ 1 tsp cornflour
β’ 1 tsp rice vinegar
Method
1οΈβ£ Rinse rice and cook according to packet instructions.
2οΈβ£ Slice chicken breasts in half horizontally to make thin fillets. Season with salt and pepper.
3οΈβ£ Coat in flour, dip in egg, then press into panko breadcrumbs.
4οΈβ£ Fry for 4β5 mins per side until golden and cooked through. Rest, then slice.
5οΈβ£ Heat sesame oil in a pan, then add garlic and spring onion. Cook until fragrant.
6οΈβ£ Add amino sauce. Mix cornflour with water to make a slurry, then stir through and cook for 2β3 mins until thick and glossy. Add rice vinegar.
7οΈβ£ Build your bowls with rice, veggies and sliced chicken. Spoon over teriyaki sauce and garnish with coriander and sesame seeds.
