Spiced cookie stack.... these are super simple to make and can be stored in the freezer so you don't need to eat them all at once. 🙂 Also perfect high protein/ low sugar snack for kids and babies.

Ingredients
1 1/2 cups almond meal
1/4 cup flaxseed (freshly ground)
1/4 cup coconut oil
3 tbsp almond milk or other nut milk
1/4 cup maple syrup or rice malt syrup
2 tsp vanilla paste or 1 tsp essence
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp ginger powder
1/4 tsp nutmeg

Preheat oven to 120oC. Prepare baking sheet with paper and grease with coconut oil.
Mix all ingredients together in a large bowl until well combined.
Drop approx. 1 heaped tsp of mixture onto parchment and shape/ flatten with a wet spoon.
Cook for 30 to 40 min until slightly golden. Cooking on a low heat helps to retrain the beneficial qualities of the nuts and seeds.

A delicious late lunch at Romulus and Remus, slow cooked lamb for two with duck fat wedges and spinach. Usually Italian eating can be a little tricky for gluten and dairy free eats but not here... plenty of options 😃, flavour and enough food to not need any dinner!

My first use of tigernut flour (my current favourite prebiotic for gut health) was a success with this Sunday brekkie.... tigernut pancakes with coconut oil fried banana and coconut yoghurt 😀

Serves 2
1/2 cup tigernut flour
2 tbsp coconut flour
2 eggs
1/4 cup almond milk
1 tsp apple cider vinegar
1/2 tsp vanilla essence
1/2 tsp baking powder
1/4 tsp salt
Coconut oil for cooking

Whisk wet ingredients together in a medium bowl. Mix dry ingredients together and add whisking to a batter. Add a little more almond milk if needed to make a slightly runnier batter.
Melt 1 tsp coconut oil in a fry pan on medium to high heat. Drop in batter to make palm sized pancakes.
Flip once they start to bubble and cook for another 2 to 3 mins.
Enjoy with your favourite fresh or baked fruit.

Cauliflower steak.... who knew this could be so good!? Steam for 5 min then sauteed in coconut oil and sprinkling of turmeric, salt, garlic and cayenne powders.
Served with kale, basil, orange and pumpkin seed salad... hitting my 5 a day on one easy meal 😊
