One of the simplest ways to cook and enjoy vegetables is just to roast them!
A rainbow of veggies, my go to collection is Beetroot, Sweet Potato, Pumpkin, Carrot, Zuchini, Potato's, Capsicum, onion, garlic, and when we have them, macadamias thrown on in the last 5 mins with the Zuchini and Capsicum.
Sprinkle with mixed herbs, salt and pepper, olive oil and roast. Top with crumbled Feta on the plate and that's it. So simple. Every bite, delicious and of course nutritious!

Packed with healthy fats, fibre, protein, Omega 3s (ALA), Potassium, Magnesium, Calcium, antioxidants and tons of other minerals and vitamins. All of these things contribute to good heart health, so get macadamias into you!!
My favourite nut, without a doubt, but if you ever wondered why they are as expensive as they are... The process of shelling them down to the edible part is quite a mission, but totally worth it! We are so blessed to have an incredible, huge and long established, abundant Macadamia tree on our property, and we rarely don't have nuts available, she fruits continuously and they last months once collected!

An imbalance between the bodys natural production of free radicals, and its ability to neutralise them or eradicate them. The harmful effects of oxidative stress over time include tissue damage, chronic disease, pain and inflammation. Think of rust or how an apple goes brown once you expose its flesh to oxygen.

Take this questionnaire to see if you might be suffering from oxidative stress!!

- Do you react to high levels of pollution?

- Are you sensitive to chemical smells, smoke or perfumes?

- Do you regularly feel fatigued or lethargic?

- Do you suffer from joint and/or muscle pain?

- Are you frequently exposed to pesticides or chemical cleaning products at home or work?

- Are you a cigarette smoker?

- Are you exposed to second hand smoke?

- Do you drink daily? (4 drinks for men, 2 for women?)

- Are you exposed to less than 15 minutes of sunlight per day?

- Do you regularly get sunburnt?
