Does feezing turmeric significantly reduce its anti-inflammatory properties?
The main anti-inflammatory compound in turmeric is curcumin, which is quite stable at freezer temperatures. Freezing fresh turmeric root is actually a good way to preserve it for months with very little loss of beneficial compounds✔️
A few points:
Fresh turmeric root: Freeze it whole or in chunks (with or without the skin). You can grate it straight from frozen✔️
Turmeric powder: Keep it in a cool, dark cupboard rather than the freezer, as moisture from condensation can cause clumping✔️
Cooking: Long periods of high heat may reduce some of turmeric's beneficial compounds more than freezing does✔️
Absorption: Curcumin is absorbed poorly on its own. Taking turmeric with a little black pepper (which contains piperine) and a source of healthy fat (such as olive oil, avocado, or coconut milk) can improve absorption substantially🌿
