Almond Croissant Baked Weet-Bix 🥐

2 Weet-Bix
20g protein powder, vanilla
¼ tsp baking powder
110ml skim milk
½ tsp vanilla essence
60g apple puree
1 egg
10g almond butter
5mL sugar-free maple syrup
10g almonds, sliced

1. Crush the Weet-Bix in an oven-safe glass container. Mix the protein powder and baking powder together.
2. Add the apple puree, egg, vanilla essence and 100mL milk. Stir until fully combined.
3. In a small bowl, combine the almond butter, maple syrup, and 10 mL of milk. Drizzle over the top and gently swirl into the batter.
4. Sprinkle sliced almonds on top.
5. Airfry at 160°C for 20 minutes.

Optional: dust with a few pinches of icing sugar

Chocolate Fudge Protein Balls

250g cottage cheese
120g protein powder (chocolate)
90g rolled oats
50g natural peanut butter
60ml sugar free maple syrup
100g dark chocolate
15ml neutral oil

1. In a blender, blitz rolled oats until fine (flour like consistency). Set aside.
2. Add cottage cheese to blender and blend until smooth.
3. Add cottage cheese, maple syrup, oats, protein powder in a large bowl. Mix until combined.
4. Shape into 12 balls using 2 spoons (mixture will be quite sticky). Place on baking paper & set in freezer for ~30 minutes.
5. Melt chocolate with oil in microwave in 20 second increments. Stir until smooth.
6. Dip protein balls into the chocolate and then place back onto baking paper.
7. Sprinkle with salt & set in fridge until chocolate becomes hard.
8. Store in an airtight container for up to 5 days. I placed half my batch in the freezer & consistency was even better!

Biscoff Banana Overnight Weet-bix [Meal Prep Edition]

Recipe below for 1 serve 👇🏼

BASE
2 weet-bix
¼ tsp cinnamon
15g protein powder
⅓ cup milk

TOPPINGS
½ banana, sliced
160g yoghurt
10g biscoff spread, melted (goes a long way trust me)

1. Crush 2 Weet-Bix in a bowl or container, add cinnamon protein powder, then milk. Mix and flatten into an even layer.
2. Layer the sliced banana on top of the base.
3. Spoon the yoghurt over the banana.
4. Melt biscoff in the microwave for 20 seconds. Drizzle this ontop and make a swirl.
5. Refrigerate 15 minutes (minimum) or overnight.

French Onion Chicken & Rice [Day 5/30 of One-Pot Rice Cooker Meals]

Using Campbells, Australia’s Favourite High Protein Bone Broth, which gives this meal extra flavour & nutrition (~20g protein per pack :muscle::skin-tone-3:) with no extra work from you!

1 cup basmati rice (uncooked, rinsed)
500mL Campbell’s Real Bone Broth Chicken
2 cups spinach leaves
1 brown onion, thinly sliced
1 packet of french onion soup mix
4 chicken thighs
½ cup light mozzarella
Optional: Fresh parsley & steamed broccoli to serve

1. Add to the rice cooker, rinsed rice, Campbell’s Real Bone Broth Chicken, onion & sprinkle 3 tsp of the french onion soup mix, & cook on white rice.
2. Whilst rice is cooking, season chicken with the rest of the packet of french onion soup mix and set aside.
3. Once the rice is cooked, stir through the rice, place the chicken on top and cook again on the white rice function.
4. Once finished, add cheese on top. Close lid for 5-10 minutes or until melted.
5. Serve with spinach, garnish with parsley and extra cracked pepper.

my go-to immunity shots 🍊🫚✨

perfect for when you’re feeling under the weather… 😣
 
2 oranges
1 lemon
30g fresh ginger (add more if you want it stronger)
½ tsp turmeric powder
Few cracks of black pepper
¼ tsp cayenne pepper
1 cup water
 
1. Peel the rind off the lemon, oranges, and ginger using a knife.
2. Place all ingredients into a blender and blend until smooth.
3. Strain the mixture through a sift, then pour the juice into shot glasses or glass jars for storage.
 
makes about ½ a litre | 8 shots
