Creamy Red Lentil & Yam Soup ๐Ÿฅฃ

A protein & fibre combo. Any veggies work in this one. Sweet potato instead of yams would be good.

Ingredients

3 cups red lentils
5 spring onions, sliced
1 red onion, diced
8 roasted garlic cloves
1 yam, roasted and chopped (or sweet potato)
360g enoki mushrooms
2 tablespoons grated ginger
400ml coconut milk
14 cups bone broth
ยฝ cup organic tomato paste
Baby spinach leaves
Extra virgin olive oil

Spice Mix

1 tablespoon garam masala
2 teaspoons ground coriander
2 teaspoons chilli powder
2 teaspoons ground turmeric
2 teaspoons ground cumin
1 teaspoon sea salt flakes
1 teaspoon freshly ground black pepper

Method

In a large pot, gently fry the red onion and spring onions in extra virgin olive oil until softened.

Add the garlic, ginger, spice mix and tomato paste. Stir for 1-2 minutes until fragrant.

Add the roasted yam, enoki mushrooms, red lentils, bone broth and coconut milk. Bring to the boil, then reduce to a simmer and cook until the lentils are soft and the soup is thick and creamy (about 30 mins).

Stir through baby spinach leaves just before serving and allow them to wilt.

Makes a big batch and freezes beautifully.

Wellโ€ฆ I think Iโ€™ve found my new favourite food and itโ€™s being added to the Phase 1 Food List ๐Ÿ’™

Iโ€™ve eaten lotus root before, but this week was the first time Iโ€™ve actually cooked it myself and now Iโ€™m hooked.

Iโ€™ve been pairing it with avocado, chicken and sweet potato, and I love the crunch it adds to a meal. In fact, Iโ€™m officially adding it to the Phase 1 food list in my 6 Week Gut Reboot. After two weeks of mostly softer cooked vegetables, I think participants will be very happy to see something with a bit more texture on the menu!

Lotus root is a great source of fibre, which helps feed beneficial gut microbes, and it contains vitamin C, potassium and other plant compounds that support overall health. Most importantly, itโ€™s another wonderful way to increase plant diversity, something Iโ€™m always encouraging people to focus on.
