This was approximately 100 kg of crystallised honey stored in a drum.
When the fire was finally out, we expected to find a pool of burnt honey. Instead, we were met with something extraordinary. We were fascinated to see that, despite the fire, the crystallised honey largely retained its solid structure. The honey had largely retained its shape, almost as though time had stopped.
The explanation lies in the crystallised sugar matrix. Rather than behaving like a liquid, the tightly packed crystals gave the honey remarkable structural stability. Combined with honey's poor heat conductivity, the interior was able to resist complete collapse, creating a scene that looked almost impossible—but was entirely real.
