For those of you who might have missed the trend, this is what those in the foodie biz like to call an epic smoothie bowl! Now to reach an epic smoothie bowl level you need to hit some key bench marks, we'll list them below:
​1. The consistency of the smoothie bowl must be thick and creamy!
​2. It should be a balance of nutrients, so that you don't get a sugar high, so incorporate good fats like coconut yoghurt, avocado and nuts, leafy greens, veg like cauliflower, zucchini and sweet potato
​4. Help boost your gut health, this can be done by incorporating probiotics from our COYO® coconut yoghurt and COYO® Kefir
​5. And of course, must taste AMAZING!!

What are you baking this weekend? We're re-creating this delicious banana bread recipe by , you're welcome to join us 🍰

Ingredients:⁣
Banana Bread:⁣
1 cup wholemeal plain flour⁣
1/2 cup coconut sugar⁣
1/4 cup runny peanut butter⁣
1/4 cup coconut yoghurt ⁣
Pinch nutmeg⁣
1 tsp cinnamon ⁣
1 tsp baking powder⁣
1 tsp vanilla extract⁣
Pinch sea salt⁣
2 eggs⁣
3 ripe bananas ⁣
1/2 cup chopped nuts⁣

​Top:⁣
Coconut sugar⁣
Cinnamon⁣
Chopped nuts⁣

Blueberries:⁣
1 cup blueberries⁣
Handful thyme⁣
1/2 lemon zest⁣
2 tsp coconut sugar⁣

Toppings:⁣
COYO® Coconut Yoghurt⁣

Method:⁣
Preheat the oven on 180°C. Blend together the peanut butter (needs to be a runny kind for yummy moist banana bread), coconut yoghurt and sugar until combined well. Add in the eggs and vanilla extract and combine. ⁣

Then break up the bananas and add to the mixture, slowly blend them in (you want the mixture to still be pretty chunky). ⁣

In a separate bowl, whisk together the dry ingredients. Add the dry mixture into the wet, small part at a time, and mix on a low setting. ⁣

Grease the baking pan (I used nuttelex) and pour in the mixture. I also add a baking sheet to help it stay non-stick. ⁣

Sprinkle more cinnamon, coconut sugar and chopped nuts on top. Use a knife and cut through one line in the middle of the batter. ⁣

Bake in the oven for 50 minutes or until a skewer comes out clean.⁣

Allow to cool in the baking pan, tip upside down onto a cooking rack and completely cool before slicing.⁣

Mix together the blueberries ingredients together in a pan until the berries have softened. ⁣

Smother a fresh slice of banana bread with coconut yoghurt and top with piping hot blueberries. Enjoy!

Who needs a Friday snack? This bananalicious creation is super easy to whip up and is full of goodness. Good fats, probiotics, potassium and fibre! Simply cut a banana in half and fry in coconut oil, then top it with COYO® Coconut Yoghurt, cinnamon and nuts. What's your go to snack?
