I feel like labeling this weeks update post as "shirt happens".

The weather kept up the cold, wind and dare I say it wet of winter.
Greg and Chris up at main farm entertained some overseas individuals while preparing for Mudgee Field days. Mudgee is a farmers field day and goes across Friday and Saturday. Meaning the girls get to come home for Sunday. It doesn't work so well for those of us that also work full time in town unfortunately but Greg and Chris were able to get to it safely and back. The Galloways Australia page had a few posts on Mudgee.

Winter hay was fed out as usual and all the usual checks on animals performed. Unfortunately, one of these checks identified an issue with one of our young friendly belties. Her name was Esmeralda and she was a young heifer with a big future. But on observation she had something wrong with her leg. As Greg had to leave for Mudgee, Chris and Ken managed to get her into the yards for the vet. The prognosis on moving was not good and she could hardly weight bear on a front leg. The vet confirmed the worst, she had an injury that was not recoverable from and would slowly pass away from in a lot of pain. This was a paddock injury and although rare they do happen. Sometimes animals are injured fighting, sometimes they fall in rabbit holes, and sometimes they run into things. What happened to her we will never actually know 100%.

This is one of the hardest parts of having animals that you care for and raise with respect to them as living creatures. We know they are meat animals and that reason is why we have them. But to have them suffering is heart wrenching. No animal should suffer. In this instance the vet with permission was able to euthanize her on the spot so she did not suffer for long.

For us it is important to tell people that it is not all cupcakes and daisies.

Farming is hard.

Big welcome to Lakeside Galloway Stud with Minto and Lilliesleaf genetics. Thank you for sending through images of the girls safe arrival.

Something we worry about when transporting animals especially overnight is how they will be treated and how they will get off at the other end. These photos of the Lilliesleaf ladies just after thy arrive show the the girls arrived perfectly happy.

We are sure the ladies of Lilliesleaf will be very happy in their new home.

This week at Minto Farm.

Winter finally arrived this week with a wet, cold and windy week. Winter feeding continues with hay bales going out to the various paddocks to keep them topped up. The warm weather up until this week has been appreciated with the grass especially clover hanging in. Unfortunately it means that the weeds are also still growing - Especially the Cape W**d and Mashmallow W**d. In small doses Mashmallow W**d (Malva parviflora) is innocuous, however in large doses where cattle have not recently eaten can result in sudden death. To keep it simple the death is caused by nitrogen from the plant binding to the animals haemoglobin instead of oxygen - death is very fast. So keeping on top of weeds is something we need to do. Unfortunately it’s the wrong time of year to do much spraying and we will need to wait till spring.

One of our projects is a regeneration area. This is a small area of the farm where previously 3 proud old gumtrees stood. The cockatoos seeking grubs ring barked the old trees much to our dismay. The three old trees are now skeletons and we have fenced off underneath. This week we put a water tank into the area so we can water new plants. Moria the heifer took advantage of the poles we used to help roll the water tank off as a scratching post. Photo to come!

Greg and Chris have been helping establish a new commercial Galloway herd in West Wyalong, with a number of commercial animals having been delivered there recently.

Some of the dun and black Minto herd can be seen on Harcourt Hill where they enjoy the views, these girls are there for winter. This backs directly onto a suburb and we hope that the public enjoy being able to see the cows gentle grazing the hill.

Lastly, the Lilliesleaf Herd farewelled 4 girls (see video) who are destined for Victoria to start a new Galloway Stud. We hope they arrive safely tomorrow morning. They loaded wonderfully and were being escorted on a Cattle Stud transport along with some big Hereford bulls, two young Highland and a lovely Angus.

This coming week Greg and Chris along with Fiona (the White Galloway) and Eve (a Belted Galloway) are headed to Mudgee field day where they will be on display alongside several Monreith Galloways. If you get the time Mudgee is a great field day on Friday and Saturday - just don’t turn up on Sunday as no one will be there!

Getting to know us.

We thought a brief post on us might be in order.

Minto Farm, was founded by Greg and Chris Stuart in 1988. Chris Stuart nee Kerwin had grown up in a large family in post war Brisbane and area. The important thing to note is that her Grandmother came from a small farming community called Boonah, where the family had a property called Woodlawn. Woodlawn in Qld has a volcanic plug called Minto Crag that Chris, siblings and cousins roamed as they grew up.

While Chris trained as a school teacher she was always drawn to the land and to the family farm. She and Greg met in high school and were in accordance with family lore love at first sight.

After many years, and four children later, they finally found a place to call theirs. Yup the modern day Minto.

Unfortunately, Chris died in 1992, not long after making the switch from Herefords and black baldies to Galloways.

Greg and the kids remained dedicated to her memory and to establishing what would become one of Australia best Galloway studs.

Greg is an engineer by trade and if at times his thinking appears complex it’s because the engineer still exists. Be it fixing engines, cattle’s crushes or designing laneway and cattle yards.

Minto was expanded to the Boorowa property greenacres, where a lot of the commercial girls live.

Over time Greg met another Chris (nee Hart) and fell in love. Chris like Greg had spent time living outside Australia, she was a geneticist by training and worked with the CSIRO.

With Chris the breeds expanded to include the Benvuie Belted Galloway Herd and the Teviot White Galloway herd. Under her watchful eye, the three breeds were built up using the best Australian and international genetics. Chris brought another 2 grown up kids into the family.

These days family events are full of grandkids and great grand kids. And it’s amazing to see the growth from all those years ago.

Of the six kids, two are still very active on the farm. Liz who with her partner, help run the Minto property and have their own Lilliesleaf silver galloway stud and Allan, who runs the commercial meat enterprise with his wife Kate.

More recently the third generation out has received their first shipment of Galloways Girls to establish another commercial stream.

Over time we hope to tell you more about our life and just tell you how it is. Farming is not easy, modern living is not easy but having family around you makes it that little bit better.

Sunday is soup making day at the Teviot Cottage (part of Minto farm). Usually we make a big hearty soup almost stew using all the bones that make soup amazing but takes time.

Today we used the field mushrooms. Big ole flat field mushrooms are one of natures gifts in the paddocks and yes they grow in dirt and yes they are open in insects. And yes we know which ones you can eat and which ones not too eat or serve.

Today’s we went all out with a roasted mushroom soups using stuff we had in the cupboard and in the field.

Pick mushrooms choose ones that are recently opened or still unopened. While the blacker they are underneath the more flavour the longer they’ve been open the more the insects will share your meal!

Back at the cottage, cut the base off the mushroom and wipe the mushrooms top with a damp paper towel. You can rinse out most paper towels and reuse. The point is don’t wet your mushrooms just a damp wipe to get rid of most dirt.

Add to bowl and douse with olive oil, rosemary, salt and pepper.

Now this step is important.. put on an oven rack, not a tray, in a single layer. Use an air fryer if you have one and bake for about 20 minutes at 200 c . Add a bulb of garlic into the air fryer at the same time.

While that’s happening
Add hot water to dried mushrooms- I have an Aldi special. This gives you your stock and a second mushroom! You can if you want add some chicken or vegetable stock to this soaking mix as well.

Then sweat a k**b of butter celery and onion together in a pot. Don’t let it burn!

Add a handful of flour to the mix- this is just to assist in holding the port and butter in to the broth. Flour acts as an emulsifier in this instance.

Add a dash of port, cognac, dry white wine to the flour onion mix and give it a good stir.

Add all the now cooked mushrooms, soaking mushrooms and roasted garlic to the pot.

Simmer until the mixture thickens a wee bit.

Then blast it with a stick blender till smooth!

I served with Turkish bread, a dollop of labneh and a sprinkle of thyme.
