Local “Thing Nyee” and widely known as Sechuan Pepper”.

Sichuan pepper (花椒, huājiāo) is a unique, aromatic spice derived from the dried outer husks of berries from the Zanthoxylum (prickly ash) plant, not related to black or chili peppers. It is famous for producing a "numbing-spiciness" (málà) when paired with chili, due to the compound hydroxy-alpha sanshool which creates a tingling, electric sensation on the tongue.

Key Characteristics & UsageFlavor Profile:
Citrusy, woody, and slightly floral with a distinct, vibrating numbing effect.Essential Ingredient: A staple in Sichuan cuisine for dishes like mapo doufu and Chongqing hot pot.Forms: Available as whole, ground, or oil. Best toasted and crushed just before use to maintain its, sometimes fleeting, potency.Varieties:Red (Red Sichuan pepper): More complex aroma, slightly milder.Green (Green Sichuan pepper): Milder aroma, but more intense, citrusy, and numbing.Important TipsPairing: Often paired with chili peppers for málà and is a key component of Chinese five-spice powder.Storage: Stores best in a sealed container in the freezer, lasting up to 24 months, to prevent it from losing its aroma and becoming dusty.Substitution: A mixture of black pepper and coriander seeds can work as a substitute, but it lacks the unique numbing effect.

Benifits of Walnuts:

Come and help make this organic walnut kernel from Bhutan. Learn about the four health benefits of walnuts and how much you should eat.

Walnuts' history can be traced back to ancient Persia, where they were once meant for royalty. Eventually, walnuts made their way to many farms across the world.

Walnuts have been considered valuable throughout history, but why? We might find the answer by looking at the nutritional benefits of walnuts.

1. Heart health
Walnuts are a great source of alpha-linolenic acid (ALA), an omega-3 fatty acid that is important for reducing inflammation. In fact, it is the only nut significantly high in these omega-3 fatty acids. Their anti-inflammatory compounds may reduce the risk of heart disease.

2. Brain health
Studies have shown that the antioxidants and anti-inflammatory polyphenols (compounds) found in walnuts may improve brain function and slow mental decline that occurs with aging. Cognitive functions include your memory and ability to think.

3. Gut health
Bacteria and microbes in your intestines and gut are also essential to your health. Research shows walnuts can improve gut health. In a clinical trial, adults who ate walnuts every day had healthier gut bacteria.

4. Cancer prevention
Microbes in your gut take compounds found in walnuts and produce urolithin compounds. These urolithins may help lower the risk of certain cancers. Research is still being done to fully understand walnuts’ potential role in cancer prevention. Sources:
