It is the New Year, the holidays are over.. back to meal prep time for me
This one I like because we make a large batch and voila! I have leftovers, and I save like $15 from not going to the drive thru the next day at lunchtime

Made with simple ingredients like - red peppers, chick peas, mushrooms, tomato, rice and of course cheese!
