Feeling a Bit Lemony Today πŸ‹

Sharing my Lemon Curd Recipe.

6 egg yolks put through a strainer to get any unwanted white stuff out.

Place a medium pan with water part way and bring to a soft boil.

Next in a heat resistant glass bowl place
6 egg yolks strained
1 cup sugar
Zest of 2 lemons
Juice of 2 lemons (1/2 cup)
(Have 1/2 cup of butter cut into smaller portions set aside)
Now with lid removed place glass bowl with wet ingredients over soft boiling water. Make sure bowl doesn't touch the boiling water! Using a whisk, whisk ingredients gently for approximately 15 min. Using a spatula to scrape down sides often.
The wet ingredients will start to thicken.
Dip a wooden spoon in. If it leaves a separation then turn heat off water will stop boiling. Now add I square at a time the pieces of butter you set aside, until all are added and melted. Scape sides down. Be patient. 😊 pour lemon curd into a clean bowl. Immediately cover the whole surface with wax paper and place in refrigerator to chill for several hrs. or overnight. Now place in desired sealable container and refrigerate!
Serve with cookies, cake filling. toast etc.

How about some Strawberry Date Jam πŸ“

2 lbs of ripe strawberries πŸ“
Washed, stems removed, cut in 4 and placed in a heavy sauce pan with 2 Tblsp of lemon juice stirred in. Bring to a slow simmer on low (I used medium low heat your burner temp will vary, you need a low simmering boil) heat with lid on to bring out moisture. Let simmer 5 minutes.Then give a stir. Now remove lid and let simmer on low stirring frequently for 20 minutes. Now mash strawberries to your liking. continue to cook for up to an hour or less, as liquid needs to evaporate.
Sterilize your jars. I used 4 pint size jars. Any left over we ate! 😊
While strawberries are cooking...
Now take 25 whole dates. Place in a bowl and pour boiling water over them. Let sit 20 minutes. Now strain date water into a cup keeping it. Remove seeds and place in a blender adding 1/2 a cup of date water and blend. You can also use an immersion blender to make the date paste. If to thick add a bit more date water a Tablespoon at a time.
Note: add. 2/3 rds of the date paste and blend in. Taste. Sometimes the full amount of date paste can overpower strawberry flavor. You can always use remaining date paste on toast, in yogurt etc
Now with strawberries cooked down add the date paste. Stir in to blend with strawberries. Now still on (medium) low heat, bring to a simmering boil stirring often until when you scrape the bottom of the pan the jam leaves a gap.
Taste to see if you'd like it sweeter. If so, you can add a bit of honey, maple syrup, monk fruit or brown sugar. Just a Tablespoon at a time to your liking.
Now have your boiled sterilized (hot) jars, seals, lids ready. Remove 1 jar at a time from boiled water. Fill with jam then place seal and lid on. Fill remaining jars the same. Let cool and place in fridge.
