The best thing you can do for consistent healthy eating is get a handful of healthy meals you LOVE and put them on repeat! I experiment a lot with meals but when I feel burnt out, tired, or am just in an unhealthy eating rut, I come back to the basics 🫡 hopefully some of these meals can be inspo 🫶🏼
Veggie Packed Turkey & Sweet Potato Taco Skillet (ONE PAN)
- 2 sweet potatoes (this was 550g for me)
- 450g lean ground turkey
- 1.5 cups salsa
- 1 small onion, diced
- 2 zucchini, diced
- 1.5 bell peppers, diced
- 1.5 cups shredded cheese
- 1 tbsp olive oil
- Taco seasoning (measure with your heart), salt & pepper to taste
1. In a large skillet, cook ground turkey through, drain any fat, season with taco seasoning, then remove and set aside.
2. In the same large skillet pan over medium heat, add 1 tbsp olive oil, and the diced sweet potatoes. Cook covered, stirring occasionally. Add 1/3 cup of water if needed to help them steam, for about 10 minutes.
3. Add in the peppers & onions and allow this to saute for 5 minutes before adding in the zucchini. Cook covered for about 5 minutes.
4. After 5 minutes, add the cooked turkey & salsa, stirring everything together and covering until the veggies have fully softened. When they’re soft, add the cheese on top and cover to allow the cheese to melt, or if you have an oven safe pan, broil for a few minutes!
5. Serve with avocado or microgreens on top for some extra nutrients (my fav are GoodLeaf!
Ingredients:
- 2 portions of shrimp (I used 24 shrimp)
- 2 portions of rice (I used 1/2 cup uncooked basmati)
- Veggies of choice for side (I used green beans but broccolini would be really good too)
Sauce:
- 1/3 cup orange juice
- 2 tbsp soy sauce
- 1 tbsp sriracha chilli sauce
- 1 tbsp honey
- 2 tsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- Slurry: 1 tsp corn starch + 1 tsp water, mixed well

1. Season shrimp to your liking - I lightly sprayed mine with avocado oil, then seasoned with garlic powder, salt, pepper.
