What mindful eating on vacation looked like for me, part 1. ✈️

Being on vacation is all about relaxing and letting go, but for me it’s also about recharging my batteries and coming back refreshed and ready to tackle the new year! Therefore, balance eating is also important.

Here’s a little glimpse of what 2 full days of eating looked like for me 😋

Tip: Listen to your fullness cues! I personally do not have a big appetite and portions at restaurant are often huge. So I always stop eating when feeling full and pack up the extra for a snack later on ☀️

🍽️✨Day 9 of 12 - Indulge in the perfect holiday feast with our exquisite Cranberry Pork Roast! 🍽️✨

Savour the succulent flavours of tender pork infused with a delightful cranberry glaze, creating a symphony of sweet and savoury tastes that will dazzle your taste buds.

Ingredients:
- Pork tenderloin (slow roasted golden rotisserie)
- olive oil 3 tbsp
- Green beans, 1 lbs
- Orange juice ¼ cup
- Apple cider vinegar, 2 tbsp
- orange marmalade (1oz)
- Cranberry sauce (1oz)

Instructions:
- Preheat the oven to 400 degrees. Line a sheet pan with foil and set aside.
- Place a large cast iron skillet over medium-high heat to heat up. When hot, add 2 tablespoons olive oil. Once the oil is shimmering, add in the pork tenderloin and sear on one side for two minutes, or until you’ve got a nice golden crust (it should be easy to flip).
- Continue to sear the remaining sides for another one to two minutes per side until the whole tenderloin is well-seared.
- In a medium bowl, stir together the orange juice, vinegar, marmalade, and cranberry sauce.
- Place the seared tenderloin in the middle of the sheet pan. Spread half of the sauce over the tenderloin. Roast for 25-35 minutes or until the internal temperature reaches 145 degrees F.
- Meanwhile, toss the green beans with the remaining tablespoon of oil and salt + pepper to taste.
- After *10 minutes of baking, remove the tray and add the green beans all around the pork. Return to the oven.
- Remove from the oven, tent pork with foil and let stand for 10 minutes before cutting into.
- While the pork is resting, take the remaining 2 tablespoons orange juice and the remaining sauce and place in a small pot over medium high heat.
- Bring sauce to a boil and then reduce to a simmer while pork rests.
- Garnish with fresh rosemary and cranberries if desired. Serve pork tenderloin slices with reserved sauce and enjoy

Day 7 of 12 Holiday Recipes is a Mac & Cheese! Today I’m sharing with you this delicious recipe that I found on Eatingwell.com that I absolutely love!

This Mac & cheese includes sweet potatoes and makes the perfect comfort food to serve at gatherings.

Instructions:
- Preheat broiler.
- Cook noodles as indicated on the box. Drain and set aside.
- Meanwhile, poke the sweet potato with a fork in several places. Microwave on High for 7 to 10 minutes or until tender all the way to the center.
- Whisk milk, flour and garlic in a large saucepan. Heat over medium heat, whisking frequently, until steaming and hot, but not boiling. Remove from heat.
- As soon as the sweet potato is cool enough to handle, cut open and scoop the flesh into the steaming milk. Transfer to a blender and puree just until smooth, then return to the pot (be caution).
- Add cheese, mustard, salt and pepper and stir until the cheese melts. Add the pasta and peas to the sauce and stir to coat.
- Spray a backing dish with cooking spray. Transfer to the prepared baking dish.
- Optional - Combine breadcrumbs and oil and sprinkle on the pasta. Broil on the upper rack until the top is lightly browned and crispy, 1 to 2 minutes
