Ingredients:
✨Superfruit Purèe
✨2 lemons (juice & zest)
✨3/4 cup granulated sugar
✨3 large eggs
✨90 ml butter
✨Pinch of sea salt
Directions:
1. Cut up the butter into small cubes and place in a medium/large bowl. Place a strainer over the bowl. Set aside for the last step.
2. In a small pot, add the blueberry purée, lemon zest and lemon juice. Cook on medium low heat for about 10 minutes.
3. Remove from the hot burner and add sugar.
4. In a different bowl, beat the eggs and salt with a fork. Pour into the pot with the sugar and blueberry. Whisk to combine.
5. Return pot to burner and cook over medium low heat, stirring constantly until thickened and temperature reaches 170 F.
6. Pour cooked blueberry mixture through a strainer into the butter in the bowl set aside in step 1. Stir until butter is melted and curd is smooth.
7. Store in the fridge in an airtight container. Curd should keep for about three weeks.
