š¶ļø Cheesy JalapeƱo Beef & Cauliflower Bake š¶ļø

* 1 lb ground beef (80/20 preferred)
* 1 small head cauliflower, cut into florets (about 4 cups)
* 1 small onion, diced
* 2 cloves garlic, minced
* 1ā2 jalapeƱos, sliced
* 1 tsp smoked paprika
* ½ tsp cumin
* Salt & pepper, to taste
* 2 cups shredded cheddar cheese
* ¼ cup heavy cream
* 1 Tbsp butter
* 2 Tbsp fresh cilantro, chopped

šØš³ HOW TO MAKE
1. Preheat oven to **400°F (200°C)**
2. Roast cauliflower for **20ā25 minutes** until tender and lightly golden
3. In a skillet, melt butter and sautĆ© onion for 3ā4 minutes
4. Add garlic and jalapeƱos, cooking for another minute
5. Add beef, paprika, cumin, salt, and pepper; cook until browned
6. Stir in heavy cream and half the cheddar cheese
7. Combine roasted cauliflower and beef mixture in a baking dish
8. Top with remaining cheddar cheese
9. Bake for **10ā12 minutes** until bubbly
10. Broil for 1ā2 minutes if desired
11. Garnish with fresh cilantro and serve
