I’m in love with the colour of this beet 🫜 hummus I made! Packed with dietary nitrates producing nitric oxide in our bodies. Helping to improve blood 🩸 flow, relaxing blood vessels and lowering blood pressure. Beets = healthy blood flow πŸ˜€

Ingredients list:

Fresh lemon πŸ‹ juice
Tahini
Salt/pepper
Cumin
Raw garlic πŸ§„
Steamed, peeled and chopped beets 🫜
Chickpeas
Tbsp oil of choice

Mix lemon and tahini with oil in food processor. Add in seasoning and garlic mix again. Lastly add in beets and chickpeas, mix until fluffy and smooth. Oil or water may be used to thin out if too thick!
Get dipping with your favourite veggies or crackers πŸ˜‹ Stores well in fridge for a few days to a week.

Looking for some food inspiration?
How about this spicy tofu burrito bowl!
I was surprised my meat eating husband craves this dish now πŸ˜„
It has a base of lime πŸ‹β€πŸŸ© rice or substitute cauliflower rice. Baked spicy tofu, baked peppers, black beans, avocado πŸ₯‘, cilantro 🌿 and a yummy peanut sauce πŸ˜‹. It does require a bit of time and effort so usually make it on a day off. So worth it though… heathy and filling.
*** pro tip*** freeze your tofu and then thaw. Squeeze out some excess liquid before marinating and baking. The texture is way better! I always cut mine in half and put between a tea towel with a heavy cutting board and pot on top for an hour.

This is a five mushroom blend that I’ve been trying out lately. Lions Mane, turkey tail, cordyceps, chaga and reishi. Great for strengthening immunity with antioxidant powers and improving cognitive function.

Time for this nutritionist to start sharing again! Here’s my wonton soup i created today πŸ˜„πŸŒ±πŸ²
Started making the vegetable broth during the day as I had a day off my real job 😝 simmered for an hour and turned off while I went for a hike in the sunshine β˜€οΈ
Strained out cooked veggies then added fresh veggies πŸ₯• like carrots, onions πŸ§…, celery, broccoli πŸ₯¦, ginger and garlic. Also added and entire leek as it was available and some cilantro. Added in the wontons and washed up some bean sprouts.
I used fish sauce, rice wine vinegar and soy sauce for extra flavour. A squeeze of fresh lime πŸ‹β€πŸŸ© juice and a bit of hoisin to top it off! Mmmmm πŸ˜‹ it was yummy πŸ‘πŸ˜„

I’ve been so absent from my wellness page as life became very busy for me the last while! Accepting a full time position as a wellness advisor has been very fulfilling yet very time consuming. I’m grateful for my new position but still adjusting to find the balance between work and rest.
My hope is that everyone is finding some joy today no matter how big or small. No matter what you are going through there’s always something to be grateful for ❀️
