Beef liver with onions and mushrooms, purple sweet potato, and tomatoes w/ EVOO. 😉🤗

Sometimes, dinner is just simple!- but healthy!

✅Veggies used: Onions, mushrooms & tomatoes

✅Beef liver - I seasoned it with himalayan salt & black pepper, fried it in beef tallow together with the onions & mushrooms

✅ Purple potatoe 💜 Baked in oven for 45 minutes

✅️ Tomatoes- easy prep by just cutting them in quarters and drizzling them with EVOO

NOT SHOWN:
✅ Sauerkraut: Sauerkraut, or fermented cabbage, is loaded with vitamins C and K, iron, and fiber, and naturally contains healthy gut bacteria called probiotics By eating foods like sauerkraut, we enhance the health of our digestive system by optimizing our gut and balancing our gut microbiome.

*Make sure to buy Sauerkraut in the fridge.

✳Choose organic vegetables, oils, herbs & spices when possible to reduce your toxic load.

I am always on the look out for healthier products to try and to share with you.

I found this popcorn which meets all of my healthy guidelines.

Here is an anti-inflammatory nutritionist ( me)🙋‍♀️ Guideline for Healthy Popcorn

To find healthy popcorn, I recommend plain air-popped kernels or store-bought brands with three simple ingredients: popcorn, a healthy oil like olive or avocado oil, and a light touch of sea salt.

Short ingredient lists: Avoid artificial flavors, added sugars, and heavy chemical preservatives.

Quality fats: Look for snacks popped in avocado, coconut, or extra-virgin olive oil rather than cheap, highly refined seed oils.

Low sodium: Keep salt levels minimal to prevent bloating and support heart health.

High fiber: Plain popcorn naturally provides filling whole-grain fiber (around 3 to 4 grams per serving)

Happy Soup-ER Monday everyone. 🥣💕
Caldo Verde Soup 💚

For me, this soup is Madeira and and pure comfort. It is called Caldo Verde, a creamy potato and kale soup. It literally means "Green Soup". Traditionally, there is added choriço sausage, but I dont eat pork so I leave it out.
This soup is so loved in Portugal that it is the country's national dish. I grew up eating this as a kid, So, it's no wonder that every time I make it, I feel like I'm home.❤️

I have made it swapping out the potatoes for cauliflower or white beans and it was just as good 👍

Today, I thought I would make it the traditional way.

Lucy's Amazing Anti-inflammatory CaldoVerde Soup

Ingredients:

Ingredients:
10 + cups water ( I use pure filtered water but you can use chicken stock)
1 teaspoons salt
4 cloves garlic, minced
1 large onion, quartered
1 1/2 lbs potatoes, peeled and halved (about 4)
2 tablespoons olive oil
2 cups kale, finely shredded
Salt and pepper to taste

Directions:
1. In a large soup pan, combine all the ingredients except for the kale. Bring to a boil. Reduce the heat to medium and cook for 45 to 50 minutes, or until potatoes are tender when pierced with a fork.

2. Puree the soup with a hand blender until smooth. Add the shredded kale. Cook kale until its wilted. Season with salt and pepper to taste.

3. To serve, ladle soup into bowls and garnish each serving with a drop of olive oil.

Anti-inflammatory Foods 🔥 🔥🔥🔥

I learned a long time ago , 30 years ago to be exact, after becoming very ill with a rare autoimmune disease which had me experiencing symptoms such as extreme weakness, fatique, severe weight loss, chest pain accompanied by wheezing, shortness of breath and a cough, which would eventually lead to multiple episodes of coughing up blood and suffering a stroke that led me to believe that medicine doesnt always come from a conventional pharmacy.

Infact, it took years of suffering from" mysterious symptoms", having ambulances at my door more times than I can count, and constantly losing hope as I was sent home from hospital without answers.

It took me 2.5 years to get an official diagnosis and with it, only 5 years to live.

I never gave up and still continue to heal myself. 🙏

Some of the most powerful medicines come from the foods we eat and can be on our plates.

I personally believe that medicine does have a place, but combined with the right healthy nutrition, you can manage your symptoms and feel more vibrancy.

These antiinflammatory foods listed above have changed my life. These are some powerful foods that I consume daily.

These foods actively reduce inflammation, support your brain health and protect your heart, and keep your body functioning at its best.

When you choose nutrient dense whole foods, you're fueling more than just energy. You're promoting long-term health

**Denver, Colorado – July 2026** 🏔️❤️

I attended the International Vasculitis Symposium hosted by the Vasculitis Foundation in Denver, Colorado. I stayed an extra day to explore the breathtaking mountains and the famous Red Rocks.

One of the best parts of the trip was finally meeting my dear friend, Adryen Goldstein . We'd known each other for a while but had never met in person. I also had the chance to meet a wonderful new friend, Aly Kohler who joined us on our mountain adventure, making the day even more memorable.

I'm so grateful to Adryen for taking us into the mountains. I have to admit... I'm completely in love with mountains! We just don't have anything like that where I live.

This trip meant so much more than just sightseeing. Thirty years ago, I was diagnosed with Takayasu's arteritis, a rare form of vasculitis. After everything I've been through—including having both hips replaced—I never imagined I'd be walking through the Colorado mountains. Every step reminded me how grateful I am to be alive and how precious life truly is.

My heart is full. Thank you, Colorado, for the memories I'll never forget. 💙

2026 International Vasculitis Symposium ❤️

On Friday July 17th - Monday July 19th, I attended the International Vasculitis Symposium hosted by Vasculitis Foundation in Denver, Colorado.

Three Inspiring Days!

This in-person event brought in many Vasculitis patients together as a community where we got to learn expert led lectures, there were mini interactive breakout sessions where we got to choose a topic you wanted to learn more about, practical tools for everyday living and opportunities to connect and share our individual diagnosis stories with other Vasculitis patients and their families.

I had the privilege of being interviewed on my vasculitis diagnosis story and had the honor of meeting the amazing executive director, Joyce Kullman.

I am still processing everything learned and extremely grateful for the experience!

🚨💥Anti-inflammatory Meal💥🚨

Salmon, brown rice lentil stir fry & steamed broccoli & kale😉🤗
The 2 shrimp 🍤 shown were from my mom's meal - she shared with me :) 😀

✅Veggies used: Steamed broccoli & kale from my backyard garden

✅Salmon- I added sea salt, black pepper, dill , and just a small drizzle of EVOO.
I baked it in the oven for 25 minutes @400°.

✅ Brown rice & lentils- I simply cooked the rice & lentils together in a rice cooker

✅️Broccoli- I steamed the kale first as it requires very little cooking time, and then added 🥦 broccoli to same purified water and steamed for 10 min.

Happy birthday to me! 💖🩷

53 years around the sun, I am so grateful to be alive!

30 years ago, I was given less than 5 years to live so every year has truly felt like a bonus year. I am so grateful not only to have seen my daughter grow into a beautiful woman but also to witness her become a wife and mom and now Im blessed to be an avoʻ to Gabby and Santiago.

Despite all my challenges, lessons and learnings, I continue to rise!

Thank you to everyone who has been a part of my life story and continue to walk with me on my journey. 🙏
