🇨🇦Walmart Canada is where I buy my gluten free pasta. And here are my reasons… now I know some people may wonder if there are superior products offered at fancy health food stores but hear me out… 1. Taste. This trumps every other reason, it has to taste good, and it does. 2. Made in Italy. They just get it right… 3. Price 1.97? Come on, I can get 2 boxes for the price of one elsewhere. And 4. This product has the Celiac Seal of approval on the box. Aka… it’s safe for a celiac to eat. It’s a dedicated facility that you can trust. So yeah. Question- what’s your favourite sauce on pasta? Mine is meat sauce.

We wanted to find a spot to eat a gluten free picnic with a celiac friend yesterday. Something beautiful. The communal garden at Earthwise Society was just spectacular last night as golden hour kissed the plentiful bounty in the garden. 🪴 good food, friends & flowers. 🌺

Blackberry Jam
Pick the freshest berries you can find
About 4 cups
Rinse them
Mash them
Add Certo which is gluten free
Add only 1 cup of sugar for our diabetics
Cook til jammie
Prepare jars in oven at 210 degrees
Prepare lids in boiling water 10 min
Heat water bath
Spoon jam into hot jars
Wipe jar rim clean
Add lids directly from boiling water
Simmer in water bath for 5 min
Remove from bath and set to cool
Admire your cute jars of jam

Yesterday my husband whom I adore was diagnosed with Type 1 Diabetes. And because there is a unique pattern to his diagnosis and connection to our sons celiac disease I wanted to share in case there is another celiac family who could benefit from the information we have learned in the last 24 hours. My husband was very sick 10 years ago with shingles, shortly after he started losing weight and was unbearably thirsty, within a short time we scheduled a Drs visit and he was diagnosed with type 2 diabetes. He has been treated for type 2 for 10 years, and has been insulin dependent for 5. Despite increasing doses of medication his numbers were never in control. No matter how hard he tried his numbers swung dangerously low to high.
In recent months he lost even more weight and the thirst returned with extreme lows at night. He was very tired and did not look well.
I had this crazy thought that somehow his diabetes was linked to our sons celiac
During our last visit to the Dr I asked for further testing, as he seemed to just be getting sicker. The test results came in yesterday.

He was diagnosed with LaDa
Late Adult onset type 1
Auto immune diabetes
Sometimes referred to as Diabetes type 1.5

Specifically they tested his autoimmune anti bodies (just like they do with celiac)
And also his pancreas function
(As the body is attacking the pancreas organ
(Just like celiac attacks an organ- your intestine)

We finally have the proper diagnosis
Autoimmune diabetes is linked genetically to the same faulty gene that cause autoimmune celiac and autoimmune thyroid disease.

It typically is triggered after a lowered immunity event which in his case is likely the episode of shingles he had.

We are now learning all about Type 1 and the steep learning curve of counting carbs to give insulin each meal and managing levels.
It is going to take some time for him to feel better.
If you are celiac or are a direct first degree relative of one, you are more susceptible to triggering autoimmune diabetes.
