Here’s what you need to make this flavour packed dressing:

-extra virgin olive oil
-balsamic vinegar
-fresh basil leaves
-dijon mustard
-garlic
-salt + pepper

Ingredients:
250 grams halloumi
2 cups chickpeas, drained and rinsed (about 2 cups)
1 cup cooked orzo
1 cup cucumber, chopped
1 cup grape or cherry tomatoes, quartered
½ cup fresh mint, chopped
salt and pepper to taste

Chili Oil Vinaigrette
¼ cup olive oil
2 tbsp white wine vinegar
1 tsp crunchy chili oil
1 tsp honey or maple syrup

Step out of your breakfast comfort zone and try this Quinoa Coconut Milk Porridge!

Recipe:
¼ cup quinoa uncooked
¼ cup coconut milk
½ cup water
1 tsp maple syrup
½ tsp vanilla extract
Pinch of cinnamon

-To a small saucepan, add the dry quinoa, coconut milk and water and bring to a boil.
-Reduce the heat, cover with the lid and let it simmer for about 10 minutes or until the quinoa is cooked and the liquid is absorbed.
-Remove the pot from the heat and stir in the vanilla extract and maple syrup.
-Scoop the porridge into a bowl and add the sprinkle of cinnamon. Top with your choice of fruit, a dollop of yogurt and some extra coconut flakes or any of your preferred toppings (see below). Enjoy!⠀
