This moist and protein-packed banana bread combines ripe bananas with creamy cottage cheese, offering a healthier twist on the classic recipe.
Ingredients:
- 2 ripe bananas, mashed
- 3 large eggs
- 1/2 cup cottage cheese (full-fat or low-fat)
- 3 tablespoons maple syrup (adjust to taste)
- 2 teaspoons vanilla extract
- 2 1/2 cups almond flour
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- Optional: 1/2 cup chopped walnuts, chocolate chips, or blueberries
Instructions:
Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
In a large bowl, mix together the bananas, eggs, cottage cheese, maple syrup, and vanilla until smooth.
Stir in the almond flour, baking soda, and cinnamon until fully combined.
If desired, gently fold in chopped walnuts, chocolate chips, or blueberries. (I've never tried blueberries, but I love dark chocolate chips and walnuts!)
Pour the batter into the prepared loaf pan and smooth the top.
Bake for about 50 minutes, (cover with foil after 30 minutes if the top starts to brown too quickly.)
Remove from the oven and test with a toothpick (insert a toothpick into the center; it should come out clean when done)
Allow the bread to cool in the pan for 10 minutes. Transfer to a wire rack to cool completely before slicing.
