this is probably one of my favorite ways to get eggs into my kids.
recipe:
6 eggs
1 1/3 cup milk
1 1/3 cup flour
spash vanilla
1 tbsp sugar/honey/maple syrup
-add all ingredients to blender and blend 2-5seconds

put a dollop of butter in large cast iron skillet and preheat in oven at 425. once at temp take out pour batter in. add back to oven and cook for 20 mins. take out. transfer to cutting board and cut. serve with whatever toppings you want!
I love cooking berries and adding a "homemade berry syrup" or icing sugar or sweetened condensed milk
