Join us tomorrow morning as we walk into dawn under this beautiful and magical moon, in support of mental health and su***de prevention. 🫶

Happy 1st of May!
Thanks to the group SWEA Geneva 🇸🇪 for inviting me to introduce them to a cold lake swim. 💙
It was chilly enough to give it a try for their first plunge, and it turned out to be a memorable experience with those lovely ladies. Afterwards, we enjoyed a healthy FIKA— a moment to slow down and appreciate the good things in life.

If you have overripe bananas, I have the perfect solution: my go-to Banana bread recipe. Quick, cosy, and deliciously simple. 😉

What you’ll need (serves 8 slices):
  🔹️2–3 overripe bananas
  🔹️2eggs
  🔹️1 dl coconut sugar or honey (or skip sweetener if you prefer)
  🔹️75 g melted butter
  🔹️A splash of oat or coconut milk
  🔹️2 1/2 dl rice flour
  🔹️1 1/2 teaspoons baking powder
  🔹️Pinch of salt
  🔹️100 g dark chocolate (70%), chopped
  🔹️Optional: walnuts or pecans

How to make it:
  🔹️Whisk mashed bananas, eggs, sugar (or honey), melted butter, and milk until smooth.
  🔹️Fold in rice flour, baking powder, and salt until just combined.
  🔹️Gently stir in the chopped dark chocolate and nuts if using.
  🔹️Bake until a skewer comes out clean and the top is lightly golden. Enjoy warm or cool! 🍌

Voila! A simple, easy treat to make, full of minerals and fibre such as potassium, magnesium, and dietary fibre.
