We use umami intensity as a simple way to navigate our five single-cultivar Gyokuros.

Start with Tsuyuhikari for a balanced level of umami. If you prefer something more delicate, explore Saemidori or Seimei. For a more intense umami experience, try Okumidori or Gokō.

How to Brew Gyokuro for One

Brewing Gyokuro isn’t about watching the clock—it’s about enjoying the moment.

As the tea leaves slowly unfold, take in their aroma and allow yourself to slow down for a few minutes.

First infusion
• 4 g Gyokuro
• 150 ml water
• 50–60°C
• 2–3 minutes
Rich, sweet and full of umami.

Second infusion
• 60–70°C
• About 1 minute
The flavour becomes brighter while maintaining its smooth sweetness.

Third infusion
• Hot water directly into the kyusu
• Ready almost immediately
A lighter, refreshing cup that reveals another side of the tea.

High-quality Gyokuro can be enjoyed for 3–4 infusions, with each cup offering a different expression of the same leaves.

Sometimes, the best part of tea is simply taking the time to enjoy it.
