5 Napkin Braised Short Rib Banh Mi

3 Jews feasted on sandwiches which used leavened bread since these would not work on matzah, and asked each other a series of questions. We were sorta close.

BRAISE-to cook (meat, fish, or vegetables) by sautéeing in fat and then simmering slowly in very little liquid.

Also known as one of my favorite cooking methods, especially for grass fed short ribs. It’s practically set and forget, aka great for a busy day (I worked an 8 hour day).

These smokey cuties braised for 5 hours over low heat.

Grass Fed Short Ribs braised in red wine, cocoa powder and chipotle peppers, onions, carrots and garlic.

Served over Creamy Chive Polenta.

Topped with pickled shallots, radish and green onions

What’s your favorite cooking method?

Happy Anniversary to the time I flew to Argentina for a night, did acupressure beads in the Buenos Aires airport and accidentally moved to Sacramento!

What does one get for their first pandemic anniversary? Traditional first wedding anniversary gift is paper: toilet paper, paper masks, paper towels?

How about money to donate? For each like and comment, I’ll donate $1 to the Elk Grove Food Bank. There is an insane amount of food insecurity in the country, with or without a pandemic. Everything helps. Thank you for your support.

I wanted to bring back this oldie, but goodie post after my weekend adventure at Costco. Imagine my surprise and delight when I learned that they now carry organic Brazil nuts! Now you can get your wardrobe and nutrient needs met in one fell swoop.

Have you ever had Brazil nuts? These South American mighty tree nuts are one of my faves and super high in selenium, iron and healthy fats as well as many other vitamins and minerals like copper, magnesium and zinc.

Two Brazil nuts contain more than 100% of the recommended daily value of selenium. I eat two a day to balance out a not-totally-dangerously-low level as discovered by my naturopathic doctor. Selenium is important for thyroid hormones, immunity and brain function and are super high in antioxidants, which help the body to detoxify and slow down premature aging. This last year is helping a ton with the last part quite enough, thank you very much.

There are a range of symptoms for Selenium deficiency. The most common are:
muscle weakness, fatigue, mental fog, hair loss, weakened immune system. Much to my parents’ chagrin, I’m not a doctor, so it’s best to get checked by someone who is before hitting WebMD to diagnose yourself. I kid - my parents are perfectly happy with me being me:)

Quick, what is the symbol for Selenium on the periodic table of elements?! This is one of the two things I remember from high school chemistry. Leave your answer in the comments below.
