Dr. Courtney Craig Diet & nutrition strategies for chronic fatigue syndrome (ME/CFS), fibromyalgia, & long-COVID from a fellow Spoonie I truly believe you can too!

First diagnosed with CFS as a teen, I have spent nearly two decades learning as much as I can to get my health back. Using both conventional medicine and integrative medicine, I was able to overcome debilitating fatigue and brain fog. I offer online and in-person consultations for patients with Chronic Fatigue Syndrome/Myalgic Encephalomyelitis and Fibromyalgia. I believe diet should be the founda

tion of any treatment protocol. My main focus is eliminating diet-induced inflammation and promoting nutrient-dense eating habits. I am passionate about sharing hope and healing through food for those with chronic illness.

Everyone online is talking about “fibermaxxing” right now. But I think the conversation is missing something important.

The goal is not necessarily more fiber. It’s a broader range of inputs. Different fibers do different things.

Some support butyrate production. Some affect motility. Some feed specific bacterial species. Some help regulate stool consistency or support the intestinal barrier. This distinction matters for postviral conditions, especially when sensitivities narrow the diet.

Read more in the latest blog below with a helpful infographic included.

Learn how different fiber types affect gut health and dysbiosis in long COVID (PASC) and ME/CFS—and why typical high-fiber diets often fall short.

There’s growing evidence that viral material may remain in the body—particularly in the gut—long after the initial infection. That doesn’t mean an active infection, but it may help explain why symptoms persist.

We see this now in long COVID, but we've known it for decades in ME/CFS thanks to the work of Dr. Chia.

Evidence-based look at viral persistence in the gut in long COVID (PASC) and ME/CFS—and why gut health still matters for symptom management.

Unfortunately, I've seen so many patients waste money on these tests.

Many result in unnecessary food restriction that further worsens the condition.

A multimillion-pound industry has sprung up promising it can detect sensitivities to certain ingredients with a simple remote finger prick test. But the results can be misleading – and even dangerous

One of the most frustrating things about ME/CFS and long COVID is being told by a doctor that there’s nothing that can be done.

I hear this all the time. I’ve experienced it myself.

And yet, if you actually look at the literature, that’s not what it says.

The Grach et al. (2023) review outlines multiple approaches:

- pacing
- symptom management
- dietary strategies
- medications
- support for coexisting conditions

Small improvements add up. Stability matters. Avoiding crashes matters.

I put together a guide on what actually helps and how to think about treatment more realistically.

Learn evidence-based treatments for chronic fatigue syndrome (ME/CFS)—from pacing and diet to supplements and immune support.

How to think about supplementation and links to additional articles I've written about the top supplements in postviral conditions.

Most conversations about alcohol intolerance in long COVID, ME/CFS, and fibromyalgia stop at histamine. But histamine is rarely the full story.

Alcohol shifts NAD+/NADH balance, blood flow, gut signaling, and autonomic regulation all at once, which may explain why tolerance suddenly changes after viral illness.

Check out a new blog focusing on these mechanisms below:

Alcohol intolerance in long COVID / PASC, ME/CFS, and fibromyalgia explained. Learn why wine, fatigue, brain fog, and gut symptoms happen after viral illness.

A new microbiome study identified a previously “hidden” group of gut bacteria that appears more often in people with better overall health.

For those of us following research in ME/CFS, fibromyalgia, and long COVID (PASC), this is one to watch! Studies like this remind us that sometimes the most important players in the microbiome are the ones we don’t fully recognize yet.

Science moves slowly, but discoveries like this help build a bigger picture of how gut ecology connects to systemic health. I’ll be keeping an eye on how this line of research develops.

Scientists have pinpointed a group of bacteria that consistently appear in high numbers in healthy people, suggesting that these could one day be targeted through diet or probiotics

Why does postviral fatigue feel like being sick ALL THE TIME?

One possible piece of the puzzle is LPS (endotoxin)—a bacterial molecule that can trigger immune signaling and is linked to fatigue, brain fog, and that “flu-like” crash.

In this post, learn:
- what LPS is
- how dysbiosis may increase LPS
- how this connects to "cytokine-sickness behavior"
- and where diet may influence LPS

Lipopolysaccharide (LPS) is an immune trigger linked to dysbiosis, barrier dysfunction, and chronic inflammation in ME/CFS and long COVID. Learn how low-grade endotoxemia may affect fatigue, brain fog, and energy metabolism.
