With my hectic travel schedule becoming dormant, I am spending a lot of time in the kitchen.
I found this recipe in one of Jamie Oliver 's cookbooks. Of course I had to edit it based on my food allergies. Thank you Jamie for the inspiration!
His recipe...Must try red cabbage braised with apple, bacon and balsamic vinegar.
I am allergic to pork, so I used turkey bacon. Recipe calls for butter, I used a dairy free alternative.
Ingredients
- olive oil
- 1/2 lb of turkey bacon
- 1 tablespoon of dill seeds (his recipe calls for fennel but we didn't have any).
- 2 apples
- 1/2 purple cabbage
- salt, pepper to season
- 1/2 cup balsamic vinegar
- a dollop of dairy free butter
- parsley to garnish
Chop all ingredients. Add to sauce pan olive oil, bacon and dill seeds. When golden add cabbage, apple, salt & pepper, and vinegar. Stir all together. Cook on low heat for an hour. Serve with a dollop of butter and dried parsley.
The recipe calls for one onion but I don't usually cook with onions. I adjusted the measurements based on my family's taste. This dish is tasty and will please all. Serves 4. Enjoy!
