Delight mom with green pancakes with colorful filling

The pancake dough goes:
100 g of chickpea flour
1 tbl amaranth
1 tablespoon HIID nettle powder
0.3 l water
1 teaspoon salt
2 handfuls of spinach

With HIID organic nettle powder you can make a gorgeous super pancake. Inspired by the Green Kitchen Diary recipe, this pancake is made more powerful by the use of nettle powder. Chickpea flour is a great binder and amaranth, with a lot of useful amino acids and vitamins. Add water, nettle flour, amaranth, fresh spinach, and salt to the blender. Drizzle everything into a smooth pancake dough and let it stand for half an hour. Add a little oil and spread the dough over a hot pan. Gently flip over if it is nicely greenish-golden on one side. Serve the pancake with beetroot hummus, cooked lentils or kimchi salad, and salad leaves. Sprinkle with roasted seeds and enjoy the power of food.
