Macros: 500–540 cal | 40–43g protein | 33–37g carbs | 18–22g fat | 10–12g fiber

Anti-Inflammatory Spicy Chorizo Mini Pizzas 🍕

Ingredients
* 3 Vista Hermosa corn tortillas
* 2 servings Upton’s chorizo seitan (about ½ package)
* 28g reduced-fat Mexican shredded cheese
* 6 tbsp Rao’s marinara
* Green peppers
* Jalapeños
* Olives
* Parsley
* Spray oil

Instructions
1. Spray a pan lightly and crisp the tortillas for about 1 minute per side.
2. Cook the Upton’s chorizo until browned.
3. Spread Rao’s on each tortilla.
4. Add chorizo, cheese, peppers, jalapeños, and olives.
5. Air fry or bake at 400°F for about 5–7 minutes until the cheese melts.
6. Finish with parsley.
