A very simple Spring/Summer salad, again using seasonal courgettes and spring onions.
Feta chews could be swapped out for tofu/cannellini beans if you are vegan and even chicken pieces for meat eaters.

Serves 4

Olive oil to fry and 1 tbsp for dressing
3 small courgettes (different colours are fun) sliced 5 mm rings
Sea salt and black pepper
2 spring onions finely chopped
200g baby spinach (optional)
Red chilli
75g feta cheese (optional)

Dressing
4tbsp Greek yogurt/skyr/vegetable yogurt
1 large garlic clove crushed
20g flat leaf parsley chopped
20g coriander chopped (optional)
A little of the red chilli (optional)
1 tbsp EVOO
1 tsp lemon juice/a little zest

Options for toppings: cherry tomatoes, roasted hazelnuts,

Heat a large frying pan and fry the courgettes for 2-3 minutes each side (if using bbq you can grill gently on both sides).
With last batch add the chopped spring onion.

Whilst the courgettes is gently frying, or prepare in advance, the yogurt dressing.

Add the ingredients above to a small food processor or use a hand blender and blitz until you have blended all ingredients- put aside.

Place the spinach in base of serving dish, add the courgette as it gets cooked and then the spring onions.

Top with the yogurt dressing, feta, a little more parsley/coriander and chilli is using.
You could add small chopped tomatoes and nuts.

As holidays approach, it’s very easy to feel pressure to “reset” quickly.

But extreme dieting often places more stress on the body than support. Crash dieting can slow metabolism, increase fatigue and disrupt hormone balance - particularly when the body isn’t receiving the nourishment it needs.

A more balanced approach is usually far more supportive, and far more sustainable.

This is exactly the thinking behind my Rapid Reset Programme.

When we think about supporting the body’s natural detoxification systems, nutrition is often the first thing people think about.

But movement plays an important role too.

Unlike the circulatory system, the lymphatic system doesn’t have a pump of its own - it relies on movement and muscle contraction to help keep fluid moving effectively around the body.

Gentle, regular movement can help support circulation, lymphatic flow and overall metabolic health. Building and maintaining muscle mass also improves insulin sensitivity, helping to reduce metabolic strain on the body over time.

Even sweating provides a small additional route through which the body can eliminate waste products.

This is one of the reasons I encourage people to move in a way that feels supportive and sustainable - not punishing.

Because long-term health is rarely about extremes.

There’s a lot of conversation around quick solutions when it comes to health - particularly around weight and metabolism.

But when we look at how the body actually works, the picture is often more nuanced.

Your liver plays a central role in fat metabolism. It produces bile, stored in the gallbladder, which helps the body digest fats. It’s also involved in regulating cholesterol - both its production and removal.

When these processes are well supported, the body is better able to maintain balance.

Rather than asking how we can speed things up, I often encourage people to ask a different question:
what does my body need to function well?

In practice, that can look quite simple.

🫚 Including herbs and spices such as turmeric and ginger in your meals.
🫜 Adding bitter foods before eating - rocket, radishes, or a simple salad with lemon - to gently support digestion.
🍷 Reducing the overall burden on the body where possible, including alcohol.
🔎 And focusing on small, consistent changes that feel realistic to maintain.

Because sustainable health rarely comes from doing more all at once.
It’s built through understanding, consistency and supporting the body in a way that fits your life.

This is exactly the approach I take inside my programmes, including Rapid Reset and Cleanse & Reboot, which are both designed to support the body’s natural detox pathways in a structured and realistic way.
