If I had £5 to feed my family of four one weeknight dinner, this is what I’d batch!

One-Pot Mac and Cheese

Made ahead. Stored in the fridge. Reheated in 20 minutes flat.

This is the system I use every single week.

I cook for 60 minutes a week to make 5 evening meals.

I spend around £30, focusing on simple, family-friendly dishes.

That’s it. No overthinking. No daily stress. Just one hour of batch cooking that carries us through the week.

And you can do the exact same with Mix and Match Batch.

On the menu was sausages, garlic greens and the most epic sweet potato mash. Grabbed from the fridge, popped into the oven and reheated in less time than it takes to reply to your WhatsApp mum’s group!

I batch cooked the veggies a few days ago and honestly… it just makes life so much easier. Real life is busy, and I don’t always have the energy (or headspace) to start from scratch at 6pm.

So having most of it ready in the fridge just changes everything. It’s literally grab, into the oven and dinner is sorted without the stress.

This is exactly why I batch cook the way I do, it takes that daily pressure off and still gives you proper homemade food on the table.

Episode 2 and week 1 of Operation: The Big 5 and we’re starting with Movement.

For 35 years I believed I was bad at exercise. I was always picked last on sports day and somehow that story just... stuck.

The reframe? Movement doesn’t have to look like the gym, a run, or anything you dread. For me it started with walking. And recently? I’ve completely fallen in love with padel.

The joy, the community, the vibes - it lit something up in me I didn’t know was missing. So much so that I started - a women’s community built around exactly this feeling.

So here’s my question for you this week: How could you move your body in a way that feels truly aligned with what brings you JOY?

Not punishment. Not obligation. Pure joy. Let me know.

1 hour in the kitchen and I have 5 dinners ready to go.

I do this because I HATE standing at the fridge at 6pm trying to work out what’s for dinner.
Opening the fridge and knowing there are homemade meals ready to reheat is honestly the biggest win. Future me is always grateful for this one.

This cook is straight from my book, Mix & Match Batch, where I show you exactly how to cook once and create multiple meals from the same ingredients.

Episode 1: Life is good.

I have a wonderful family, work I love, great friends and so much to be grateful for.

But if I’m honest, lately I’ve felt a bit flat.

A bit tired.
A bit disconnected from myself.
A bit like I’m going through the motions rather than fully enjoying this season of life.

Maybe it’s perimenopause. Maybe it’s being busy. Maybe it’s just midlife.

Whatever the reason, I’ve realised I don’t want to wait until I feel better. I want to do more of the things that I know help me feel my best.

So I’m launching Operation: The BIG 5.

For the next 30 days I’ll be focusing on:
✨ Movement
✨ Fuel
✨ Hydration
✨ Self-Care
✨ Joy

No perfection.
No all-or-nothing thinking.
No unrealistic expectations.

Just small, consistent actions that help me feel more energised, balanced and present.

I’m sharing it here to keep myself accountable and because I have a feeling I might not be the only one feeling this way.

A protein. Two one pot wonders. Three speedy sides.

Cook once, and you’ve got a fridge full of mix and match elements you can turn into loads of different dinners across the week. So instead of starting from scratch every evening, you’re just combining what’s already done.

It means less time cooking, less money spent, and way less of that daily “what on earth am I making tonight?” stress.

Let me help you do the same. Comment BOOK and I’ll send you the link to my new book.
