HAPPY EASTER EVERYONE πŸŽ‰πŸ£πŸ₯ The sun may not be shining but I'm looking forward to a day full of home cooked food with all the family! ❀️ I've made some Dark Chocolate and Raspberry Blondies to celebrate....and Easter is all about the chocolate so we're allowed a naughty treat! πŸ™ˆPlus a little dark chocolate here and there is actually quite good for us as it contains antioxidants and polyphenols.πŸŽ‰ Everything else in this recipe is refined sugar free, dairy free and gluten free as I've used ground almonds for a flour substitute! πŸ‘πŸ» With punchy raspberries, gooey dark chocolate and a gentle nutty taste these blondies are a perfect Easter treat! Rainy days call for colourful lunches 😍Salads may be dismissed as a boring or unfulfilling meal but their simplicity is one of their best features! πŸ‘ You can adapt them however you want, here's my chorizo and halloumi version- some of my favourite ingredients! It's sweet, crunchy and a bit fiery πŸ”₯Full of healthy fats, protein and of course all the vitamins and minerals in the greenery base. Throw in any veg, a little dash of balsamic vinegar and enjoy! Often dinnertime is heavily focused around meat or dairy but we can't forget the importance of vegetables, nuts, seeds and beans! These little chocolate mousse pots are incredible, you wouldn't guess there's avocado in them. Definitely a great way to get your vegetables in without realising πŸ˜€So easy to make, give it a go!

2 small avocados
2 tbsp raw cocoa powder
1/4 cup almond milk
2 tsp maple syrup / honey
1 tsp vanilla essence

Blend it all up, spoon the thick mixture into little dishes and garnish with coconut, fresh mint, some berries ... whatever you fancy! Keep in the fridge to serve nice and chilled!

A scrummy and filling dessert full of healthy fats, antioxidants and only natural sugar. YUM πŸ˜πŸŽ‰πŸ₯‘

Need a snack on the go or a little afternoon pick me up?

Energy balls are the perfect snack for this - they provide a sweet, tasty hit yet can be free from refined sugar, gluten and dairy. Instead they are full of healthy fats, protein and natural sweetness. These Chocolate Orange Energy Balls are a great guilt free treat! With pancake day nearly upon us, why not give these Banana Pancakes a go?! 🍌🍌They make for a scrumptious and very filling breakfast and with breakfast being the most important meal of the day, it's important to get your morning fuel! πŸƒβ€β™€οΈπŸ€Έβ€β™‚οΈ
It's so simple... this will make 3 small pancakes....

Mash 1 Banana and then add in 2 eggs
You can add a few oats to bulk it out a little if you wish.
Simply fry in coconut oil until browning and you can flip it over.
(coconut oil is a GOOD saturated fat and actually known as the only weight loss fat- it's a gift from the gods so make use of it!)

Chuck on any toppings you want - any fruit, honey, natural yoghurt, nut butters! I love mine with lots of peanut butter, cinnamon and blueberries!

This mixture will be naturally sweet from the banana and contain approx 12g of protein from the eggs - protein is broken down and released much more slowly in the body so will keep you feeling full until lunch...unlike sugary cereals!

Craving something sweet in the evenings? Need a replacement for that sugar filled chocolate bar?
Here's a recipe for some delicious Cranberry & Pecan Chocolate Squares! 😍 Filled with natural sweeteners, healthy fats from the nuts and antioxidants in the cranberries, these are NUTRITIOUS and DELICIOUS!

1/2 cup coconut oil
1/2 cup almond butter (could use peanut butter - the sugar free kind of course!)
2/3 cup pitted dates
4 tbsp raw cacao powder
1/3 cup dried cranberries
1/3 cup chopped pecans

Whizz up the first 4 ingredients, stir in the cranberries and pecans and whack in the freezer for an hour! Keep it in the freezer and grab a tasty square to curb those sweet chocolate cravings. Healthy treats can be exciting too!
