Last Friday, I went back to a place I hadn’t visited in 28 years. 🏥

When I was 16 and had absolutely no idea what I wanted to do with my life. I likes art and design and science.

At school I’d looked though a book of “occupations” and PHARMACIST jumped out at me.

I had no idea what it really involved (but it paid a good wage) so off I went to Seacroft Hospital in Leeds for some work experience.

That was the moment something clicked. This was for me.

Fast forward to last week and I was walking back through those doors, not as an uncertain teenager, but as a pharmacist and registered associate nutritionist, there to visit the incredible Rob Burrows MND Centre.

Wow - It stopped me in my tracks.

The centre itself could not have been more different from the hospital I remembered.

So thoughtfully designed, full of warmth and purpose. A world away from the old clinical corridors of my 16-year-old self’s memory.

Standing there, I kept thinking about how that one work experience placement, that one small decision, set everything in motion.

Your career doesn’t always start with a grand plan. Sometimes it starts with a Tuesday afternoon at a hospital at sixteen, not really knowing why you’re there.

This week I’m heading to the CAFT (Children’s Adventure Farm Trust) Ladies Lunch at Nunsmere Hall and I can't wait.

I wrote about my journey from a place of fear and hiding away to standing centre stage, sharing my knowledge, and helping women cut through the noise of nutrition misinformation, reduce the overwhelm, and actually feel their best.

This weekend, I have a challenge for you.

Before every meal, ask yourself:

"What could I add to make this meal more nourishing?"

Maybe it's:

🥗 More vegetables
🥚 More protein
🫛 Some fibre-rich beans
🥑 Healthy fats

Focus on adding rather than restricting.

Busy mornings are REAL. Getting the kids out the door, walking the dog, sorting the house and somewhere in all of that, we end up at the bottom of the list. Sound familiar?

Skipping breakfast can feel like the sensible choice - fewer calories, maintaining weight, right? But actually the opposite is true. A good breakfast fuels you for everything the morning throws at you and helps to keep your blood sugar stable reducing cravings for snacks.

So here’s my solution: 6 breakfasts prepped in under 5 minutes 🙌

Into each pot:
🌱 1 tbsp ground flaxseeds
🌱 1 tbsp chia seeds
🥣 ⅓ cup rolled oats
🥛 1 cup milk of your choice (I used soy)
✨ A sprinkle of cinnamon
🫐 A good handful of berries

I also love adding a small handful of walnuts for omega-3s, fibre and protein but I’ve left them out of these ones so my son will actually eat them 😄 I’ll stir some into mine on the morning!

These keep for 5 days in the fridge with a non-dairy milk, or 3 days with dairy.

Quick, easy, and slightly messy 🤣but now I’ve got breakfast sorted for the whole week. 💪

Do you know the difference between Best Before and Use By dates? If not, this one’s for you. 👇

❓A best before (or best before end) date means a product is at its best quality before that date after it, the food may not be at its peak, but it can still be safe to eat.

🚫A use by date is different. After that date, there may be a food safety risk, and the food should not be eaten.

🧠 Knowing the difference is so important not just to protect yourself from food poisoning, but to save money and reduce food waste.

🥫Take today, for example. I found this tin of chickpeas at the back of the cupboard and at first glance thought they were out of date. I nearly threw them away! But when I looked more closely, I saw it was a best before date so instead, I opened them, rinsed them, and checked them. They smelled fine, tasted fine, and were absolutely good to use.

I turned them into crunchy spicy chickpeas on top of my pasta a delicious, nutritious boost of extra protein and fibre. Nothing wasted.
