LOW CARB GNOCCHI

Golden and crispy on the outside, soft and fluffy in the middle.

Ingredients:
• 250g ricotta (drained if wet)
• 1 egg yolk
• 40g almond flour
• 1 tbsp psyllium husk powder
• 50g Parmesan
• Pinch nutmeg, salt & pepper

Method:

1. Mix all ingredients together.
2. Rest for 10–15 minutes.
3. Roll into ropes and cut into gnocchi.
4. Simmer gently until they float.
5. Pan fry in a little butter or olive oil until golden and crispy.

Serving suggestion:
I tossed these with homemade cashew pesto, chicken, a splash of cream and extra Parmesan 🌿

The secret is frying the gnocchi after boiling 🔥
