Life just got a little fuller, introuducing Willow Pippin 💫

It’s been a crazy few weeks with our newest addition but we are finding our groove and I’m learning cook and eat one handed again 🥰

This last year has been super busy and the pace isn’t going to let up anytime soon! I am however hoping to share a little more content this year.

I am the least social media savvy person going but instead will go with my own groove and share bits that hopefully people will find interesting and maybe even inspire you in the kitchen.

Expect to see mainly nutrition and recipe content, a look into my working life as a nutritionist including events and workshops alongside some snippets of mum life.

So here’s a little reintroduction..

FIBRE MAXING - finally a trend I can get on board with!

Fibre is the key to gut health and feeding your gut microbes but it’s not all about gut health. Eating plenty of fibre is associated with lower risk of heart disease, stroke, type 2 diabetes and bowel cancer. Need anymore reasons to up your fibre intake!?

I’ve been working on a high fibre muffin recipe and so far my little taste testers are pretty pleased. Recipe incoming…

What are your favourite ways of maxing fibre intake ?

I LOVE a smoothie but how do you build the perfect smoothie?

🍌For most my smoothies I use frozen banana or mango as a base to give a little sweetness.

🥛I then use about 200ml of my favourite natural drinking kefir for the liquid part and to get in those live bacteria and gut supporting goodness. Kefir is also a source of protein and other amazing micronutrients.

🌱 I then pack in more plants such as any other fruits and veggies. For green smoothies this will be kale or spinach and maybe a kiwi or apple. (I 💯 use smoothies to sneak greens into my kids)

🥜 I always add mixed nuts and seeds to smoothies or nut butters. Favourite seeds are shelled h**p, chia and flax for those omegas. This is also great easy way to keep exposing little ones to allergens like a variety of nuts.

🥤You can always adjust the consistency by adding a little water if too thick.

I love getting to spend a day talking about the power of nutrition and truly believe food is medicine. Not a flippant statement, there is certainly a place for conventional medicine, but as a former NHS Dr I truly believe we can all do an incredible amount for our health through our diet. Maybe most importantly however is how fabulous good food can make us feel 💪

My top 3 foods I’m challenging myself to eat more of in 2025 . I don’t set typical new year resolutions but I am often thinking about what exciting things I could be adding to my diet.

1. 🍄‍🟫 mushrooms - I have to confess I’ve not been a huge fan of the taste of mushrooms but I’m challenging myself to find tasty ways to incorporate these in my cooking. Tips welcome! There has been some fascinating research coming out around mushrooms and cancer prevention and cancer care. Although currently a lot more research is needed this is a space to watch.

2. Mixed nuts 🥜- a handful of mixed nuts will be my go to snack for the foreseeable. Studies show a range of health benefits from eating nuts daily including being associated with a reduced risk of cardiovascular disease and reduction in all course mortality. Packed with healthy fats and fibre they are 👌🏼For little ones I blend mixed nuts to form ‘nut dust’ to top yogurt and porridge.

3. 🥬 Kimchi - a fermented food I want to eat more of this year. Kefir is a staple in our household but after making kimchi for gifts this Christmas it is delicious and I want to find more recipes with kimchi. ’m thinking kimchi fried eggs for breakfast as a start.
