FYI : The knot is made from tofu sheets. You buy them dry and soak to soften prior to cooking.

Thai Butterfly Pea Flowers.

Famous for their very bright coloured liquor and colour-changing properties.  When infused using just a couple of flowers per cup of tea, the infusion is a very bright blue, if lemon or lime is added the colour changes to a lovely shade of violet. 

Very popular for iced teas, for obvious reasons: a visual feast ❤️
