Your meals should always include protein, veg and grains/carbs. But getting the right amount is tricky (especially if you are lazy like me)

New recipe:'Hawaiian meatball poke bowl'
I added an egg and forgot the greens, but good effort I thought.
The consensus was that it tasted nice, but would taste amazing if it was in a wrap with some mayo (although I think my family would put everything in a tortilla)

I'll be honest I struggle filling up 4 lunch boxes. Especially for people with different needs.
Douglas needs plenty to keep him going through a very physical day, the kids need enough energy without too much fat/sugar/processed foods, and my body has the amazing capability to turn the healthiest of foods in to love handles.

However, now we are in soup season and I can throw stuff in like a soup sachet with minimal effort- One of the few plusses of cold weather.

I've been struggling to post anything for the longest time as I have not been feeling very motivated. BUT exercising has started again, I'm being a bit more organised, so here we go...
EAT WITH YOUR EYES:

Chicken Pho-
This was delicious, and under 500 kcals!
The one on the left is my bowl. Although it appears to be slightly fuller, there is about 100 less kcals!
Me and Douglas most definitely shouldn't be eating the same size portion. So he has a full bowl of noodles, while mine is mainly veg.
Because the bowls both look full, you don't feel like you are being short changed.

TOFU STIRFRY:It's my own recipe, so I have no idea of the calories. But it's packed with veg, so can't be bad!INGREDIENT...

TOFU STIRFRY:
It's my own recipe, so I have no idea of the calories. But it's packed with veg, so can't be bad!

INGREDIENTS:
Pack of tofu
Garlic
Any veg (I used sh*take mushrooms, red and green peppers, carrots, spring onions)
Ginger
Noodles (1.5 nests for 2 people, cooked and drained, leave a couple of tablespoons of water in the pan)
SAUCE:
Ketchup (1 tbspn)
Soy sauce (2 tbspn)
Sherry/shaoxing wine (1tbspn)

Firstly take tofu out of packaging and wrap in kitchen roll (quite a bit). Put on a plate, place a chopping board on top with something reasonably heavy. This process will take moisture out of the tofu.
Next chop up all your veggies and put in bowl.
Chop garlic and ginger.

I then chopped the tofu in to bitesize pieces and coated in a mixture of flour, salt and fivespice.

Put some oil in a pan and shallow fry the tofu.
You might have to do this in batches.
Once cooked, set to one side, drain all but 1tbspn of oil.

Throw in the garlic, fry for 30 secs before adding the veggies and ginger.
Stirfry for 3 minutes, add the sauce ingredients, cook out 1 min, add the noodles and tofu.
Mix together with some black pepper.
Serve with chopped spring onion and some chilli (optional).

My fave side to just about everything.
And if you don't make your own, you should give it a go. There are loads of recipes out there, but if you are controlling calories I would definitely suggest using a low fat mayo. Reduce calories further by using low fat yoghurt.
My recipe is a bit vague, as I tend to eyeball everything, but I have tried my best to write it down:

2 medium carrots grated
A third of a cabbage finely sliced
A few slices of onion
1 tbspn apple cider vinegar
3 tbspn low fat mayo
Salt
Pepper

Add all the ingredients to a bowl and mix. Boom, coleslaw.
Add more mayo if you like it a bit creamier, add more onion if required.
Sometimes I use purple cabbage. It tastes the same, but looks prettier and contains more antioxidants in the cabbage.

I haven't posted anything in a while, and if I haven't already done it, I thought I would share my thoughts about adapting recipes.
I often have to change recipes to suit the family. Normally it's just taking the spice out.
But quite often it's because I forgot to buy all the ingredients.
Today's adaptation is beef stir-fry with lime and cashew nuts.
I don't like buying strifry sauce, so when frying off the chilli I added garlic (2 cloves).
With the hoisin sauce I added all the lime juice, 1tbspn of sherry, and 1tbspn of dark brown sugar.
(I also forgot to order noodles so had rice)
I only added a small amount of chilli while cooking. Served up for the kids, then added the rest.
Point of my post is, this meal was a surprise hit (get it made), and don't be scared to change recipes to suit your tastes!
