Homemade Mayo!

Mayo seems to be the topic of conversation often at the moment, so I thought I'd try to do a video. But then since I've got the blender going almost the whole time, I'm not sure that would be good! So here in picture form is my mayo ingredients and method:

1 whole egg, plus one yolk
One dollop of Dijon mustard
Flavour - today I used cumin but sometimes it's garlic, sometimes chilli, whatever you like!
Vinegar - often I use ACV but today I decided the vinegar from a jar of chillis for a little extra.

Finally I like to use a mixture of oils (always cold pressed, ideally organic) so that no single taste dominates.

Et voilà! Yummy

I'm currently addicted to Dandelion salad! I've been a forager for years and I knew they were edible, but everyone always said how bitter they are, so I never tried.
Until this year when someone in a foraging group said that mayonnaise takes the bitterness away. And those that know me know that I put mayo on everything anyway!
So I tried and I'm hooked.

They contain many things, including selenium which isn't that easy to get in your diet.

Hello all
Remember I was recommending that documentary on Amazon, The Magic Pill? And it turned out the link was wrong and went to a film about magicians?! Well I've been arguing with Amazon since then about it - but to no avail (Although they have, just, taken down the magician film at least!).

But I found it on YouTube so you can watch it there. Highly recommend for all:
