Slow cooker butterbean, veg and lentil stew 😋

A big warming bowl of this super nourishing stew feels so comforting and cosy in this weather! 🥰

Perfect to pop in the slow cooker and come home to on a cold evening. Makes the house smell amazing too 👌

Recipe:

1 red onion
1 large leek
4 sticks of celery
4 large carrots
3 parsnips
5 whole cloves garlic
Thumb size piece of ginger & turmeric (optional)
1 tin butterbeans
100g red lentils
Bunch of fresh parsley
2 handfuls of kale

For the stock:
1 litre of bouillon stock
1 tbsp Vegemite (or marmite)
Bunch of rosemary
1 tbsp butter
1 tbsp plain flour

Optional to serve
Coconut yogurt
Squeeze of lemon
Sprouted mung beans (or toasted pumpkin seeds)

Wash and roughly chop all the veg (keeping it chunky)
Except for the garlic (leave whole) ginger and turmeric (finely grate)

Boil a kettle and make up 1 litre of bouillon stock and stir in the vegemite

Heat some olive oil in a heavy based pan and add all the veg as well as the garlic, ginger, turmeric, salt & black pepper. Sweat down on a medium heat for 5-6 mins then transfer to slow cooker (on low)

In the same pan, melt the butter then add the flour to make a roux. Add a splash of the stock and whisk until the flour dissolves, then add the bunch of rosemary. Pour all of the stock into the slow cooker with the veg

Add the butter beans and rinsed red lentils and stir well. Leave for 5-6 hours on low. Once cooked store in a bunch of chopped parsley

Serve with steamed kale and a squeeze of lemon. I added some coconut yogurt and sprouted mung beans for some extra protein, creaminess and crunch!

So proud to share that I’m officially certified as a Yoga Teacher 🙌🙌🙌

I’ve been deeply immersed in the teachings of Yoga for the last 6 months and WOW what a ride!

It’s hard to put into words how transformative this journey has been but feeling more whole, more connected, more self aware and more content than ever before and feel like I have a new lense through which to see the world ✨✨✨

Endless gratitude to my guides for being the embodiment of these ancient teachings and for sharing the wisdom with such love and reverence. You have shown me what real devotion looks like 🙏

And so much love for my new soul family!! 🫶🏻🤗

I’m still in the integration phase right now digesting all of the magic but I will be sharing holistic Yoga offerings very soon 💛

I’ve always got raw beets in my fridge, they’re so versatile and jam packed with nutrition!

Apart from making delicious juices, they’re also amazing to have grated into salads or grains, whizzed into sauces, salt baked (with the skins on) or roasted. Roasting whole beets and fennel are a match made in heaven! 🫶🏻

5 HABITS THAT HAVE IMPROVED MY GUT HEALTH 💚

EATING MORE FIBER RICH FOODS
The healthy bacteria in our gut feed on fiber and it’s so important to keep us regular! Fibre rich foods include fruits, vegetables, whole grains, legumes, beans, peas, nuts & seeds

ADDING PROBIOTICS INTO MY DIET
I always stock up on kimchi, sauerkraut, kombucha, yogurt with live cultures and apple cider vinegar and make sure I’m including some of these daily

EATING WITHIN AN 8-10 HOUR WINDOW
Giving our digestion time to rest is amazing for our gut microbiome and can help to increase diversity and good bacteria ✨ I generally eat between 10-6.30pm in the week and it’s been so good for my gut!

EATING WHOLE FOODS 80% OF THE TIME
No food should ever be off limits if you enjoy it (unless you’re intolerant) but limiting ultra-processed food, refined sugars and foods fried in seed oils will definitely benefit your health in a big way. Eating whole foods with minimal processing (without labels listing weird ingredients) at least 80% of the time is a good balance.

EATING SLOWLY AND MINDFULLY
Eating slowly and mindfully without screens or distractions makes a huge difference in how we digest our food. We can activate our parasympathetic nervous system and put our body into ‘rest and digest’ mode simply by sitting, taking a few breaths and taking time to chew our food properly 👌
