A useful way to understand how different foods affect blood sugar. Refined carbohydrates are digested quickly and tend to have a higher GI, while foods richer in fibre, fat, or protein are digested more slowly and typically have a lower GI.

Foods with little to no carbohydrate, like meat, fish, nuts, seeds, and oils, don’t have a GI value.

Dr. Coy's naturally ocurring sugars, such as galactose, tagatose, and isomaltulose also have a lower glycaemic impact compared to traditional sugar.

EFSA has authorised a health claim for tagatose:

“Consumption of foods/drinks containing tagatose instead of other sugars contributes to the maintenance of tooth mineralisation.”

This is based on evidence that tagatose is not metabolised by oral bacteria in the same way as fermentable sugars, meaning it does not contribute to acid production associated with enamel demineralisation.

Healthy Chocolate Mousse

Ingredients:

170g Dark chocolate (at least 70% cocoa solids for best results)
3 Large eggs (separated into whites and yolks)
150ml Double cream (cold)
30g Dr Coy’s sugar
A pinch of sea salt

Melt the Chocolate: Break the chocolate into small pieces and melt it in a heatproof bowl over a pan of simmering water (bain-marie). Ensure the bottom of the bowl does not touch the water. Once smooth, remove from heat and let it cool slightly for about 5 minutes.

Incorporate the Yolks: Whisk the egg yolks into the melted chocolate. The mixture may thicken or “seize” slightly, but don’t worry it will smooth out later.

Create the Meringue: In a clean, grease-free bowl, whisk the egg whites with the sugar until they form soft peaks. Gradually add the sugar while whisking until you have a glossy, firm meringue.

Whip the Cream: In a separate bowl, whisk the double cream until it reaches soft peaks. You want it to hold its shape but still look slightly floppy. Fold this gently into your chocolate-yolk mixture.

The Final Fold: Using a large metal spoon or spatula, gently fold the egg whites into the mixture using a “figure-eight” or “Scooping” motion. Stop as soon as no white streaks remain to avoid losing the air.

Chill: Spoon into individual ramekins or a large serving bowl. Chill in the fridge for at least 4 hours (ideally overnight) to allow the structure to set.

Not all sugars behave the same in the body.

Galactose is a simple sugar, just like glucose, but it works a little differently. With a lower glycaemic index, it doesn’t cause the rapid blood sugar spikes associated with many common sugars.

And here’s something interesting: although galactose has the same calorie content as glucose on paper, the body uses more energy to process it. That means the net energy your body gets is actually lower than regular sugar.
