A useful way to understand how different foods affect blood sugar. Refined carbohydrates are digested quickly and tend to have a higher GI, while foods richer in fibre, fat, or protein are digested more slowly and typically have a lower GI.
Foods with little to no carbohydrate, like meat, fish, nuts, seeds, and oils, don’t have a GI value.
