Early summer is here, I just love that soft, golden warmth you feel on your skin… and let’s be honest, we have to make the most of it because it never lasts long in the UK.
I’ve definitely been feeling a bit dehydrated from rushing around and squeezing every drop out of these long warm days, knowing full well the rain is always waiting in the wings.
This is the time to keep your body’s fluids happy as the days get brighter (and busier).
Light, fresh, gently cooling foods are your friend right now.
Think peas, broad beans, asparagus, strawberries, basically everything the UK is proudly showing off at the moment.
And because my days can get very full, I like to batch‑make a couple of side salads at the start of the week. It means there’s always something delicious waiting in the fridge, ready to become a meal even when I’m not in the mood to cook. Future‑me is always grateful.
Asparagus and new potato salad, my absolute early‑summer staple. It’s simple, fresh, and perfect for batch‑making so there’s always something nourishing in the fridge when days get busy.
