During this London heatwave, we couldn’t crave anything except fresh vegetables.
When it’s this hot, all we want is food that feels light, juicy and naturally hydrating. So this tomato salad has been on repeat all week.
The combination is simple, but every ingredient earns its place:
🍅 Ripe tomatoes ( )
🌿 Fresh herbs
🥜 Smoked toasted almonds
🫒 Good extra virgin olive oil (we always go for )
✨ Capers for a salty kick
🍯 Linden honey
We like Linden honey because its fresh, citrusy notes lift the tomatoes beautifully. It softens their acidity, balances the salty capers and adds another layer of freshness rather than simply sweetness.
It’s a reminder that different honeys have different flavour profiles, just like wine or olive oil. Choosing the right one can completely change a dish.
