Juicy peppers, a flavourful filling and golden melted cheese β€” a simple oven dish that’s seriously satisfying. 🀍

Ingredients:
3–4 large peppers
1 tbsp olive oil
450 g minced beef (or turkey/chicken)
1 medium onion
1 jalapeΓ±o (optional)
2 garlic cloves
1 tin chopped tomatoes
1 cup grated mozzarella
1 tbsp paprika
1 tsp oregano
1 tsp basil
Salt & pepper
1 cup cooked rice
Method:

Halve the peppers and pre-bake at 220Β°C for around 20 minutes. Meanwhile, fry the onion, jalapeΓ±o and garlic, then add the mince and cook until browned. Stir in the tomatoes, spices and rice. Mix in half of the cheese.

Fill the peppers with the mixture, top with the remaining cheese and bake for another 15–20 minutes until soft and golden.

Greek yoghurt or guacamole goes perfectly on the side. 😍
