If lunch is your nemesis, save this one.
This roasted tomato and feta wrap is one of those lunches that feels properly satisfying, but is still simple enough to prep ahead.

It’s great warm, but just as good cold, so it works brilliantly for packed lunches too.
Roasted tomato & feta wrap recipe
Serves 1
Ingredients:
150g ripe tomatoes
10g rocket
1 tsp olive oil
1 tsp garlic granules
1 tsp oregano
100g feta cheese
1 BFree sweet potato wrap – this is an intentional choice because of the fibre contribution.
1 tbsp pumpkin seeds
Method:
Preheat the oven to 180°C.
Place the feta in the centre of a small, deep baking dish and arrange the tomatoes around it.
Drizzle over the olive oil, season with cracked black pepper and sprinkle over the garlic granules and oregano. Toss the tomatoes gently so they are coated in the oil and seasoning.
Bake for 20 minutes, until the tomatoes have softened and started to release their juices and the feta is soft.
Remove the dish from the oven and place the wrap in the oven for 1–2 minutes to warm and soften.
Use a fork to gently press and combine the feta and tomatoes into a soft, juicy mixture.
Lay the warm wrap flat and arrange the rocket in a line down the centre. Spoon over the baked feta mixture, then scatter over the pumpkin seeds.
Fold the bottom edge up over the filling, fold both sides in towards the centre, then roll firmly away from you to enclose the filling.
Slice in half and serve.
