Sweet potato and aubergine stuffed with mince.
Sweet potato with the skin on is a good source of vitamin A and Vitamin C.
Vitamin C acts like an antioxidant and helps protect the cells in your body. Also helps with healthy skin and hair. Vit C also helps with wound healing.
Vitamin A is good of the immune system. Helps with vision and with healthy skin.
Lamb is a good source of protein which contains iron and vitamin B12.
1 aubergine cut into halves, coat with a little bit of olive oil
1 large sweet potatoes cut 2cm slices coat with olive oil and season with salt, pepper and paprika.
Grill the aubergine and sweet potatoes the grill or BBQ until brown and tender.
Whilst the veggies are on the grill, chop 2 large onion, 2 garlic cloves and 1 scotch bonnet and add one tbsp of olive oil to a pan.
Once hot on medium heat add the chopped onions, garlic and scotch bonnet until softened.
Add 500g of lamb mince to the pan and add a stock cube, curry powder and mixed herbs..cook down throughly until brown.
Add 1 regular can of chopped tomatoes to the lamb for 7-8 minutes on medium heat, then a add one tbsp of ketchup and mix very well.
To serve, remove the vegetables from the grill. Plate the sweet potatoes and aubergine . Mash the inside of the aubergines and the stuff it with the cooked lamb mix.
