# # Mama's Cameroonian-Inspired Spiced Sprout Soup
This recipe is a vibrant twist on a traditional Cameroonian dish, infused with my personal touch. It's designed to be both flavorful and beneficial, drawing on the wisdom of ancient traditions.
Yields: 2 servings
Prep time: 20 minutes
Cook time: 20 minutes
Ingredients:
* Base:
* 1 medium onion, roughly chopped
* 1 can (13.5 oz) organic coconut milk
* 1 cup chicken stock (or vegetable stock)
* Small portion of rice sticks
* Tiny amount of Scotch bonnet pepper (or cayenne/chili pepper), to taste
* Salt and black pepper to taste
* Optional: 1/4 tsp cumin, 1/4 tsp cinnamon, 1/4 tsp ginger powder
* Vegetables:
* 2 carrots, finely chopped
* 1/2 spring onion, chopped
* 1 cup super sprouts
* 1 cup super sprout greens
* Optional: a few blueberries
* Garnish:
* 1 carrot, shredded
* 1 clove garlic, shredded
* 1/2 spring onion, chopped
* Optional: 1/4 cucumber, shredded
* 1/2 avocado, chopped
Instructions:
1. Prepare the Rice Sticks: Steep rice sticks in hot water (boiling is optional for faster cooking) until softened. Drain and set aside.
2. Create the Base: In a saucepan, blend the chopped onion with the coconut milk and a splash of water until smooth. Pour into the saucepan and heat gently.
3. Build the Soup: Add the softened rice sticks, chicken stock, and a tiny amount of Scotch bonnet pepper (or your chosen chili). Bring to a simmer.
4. Add Vegetables: Chop the carrots into small pieces and add them along with the chopped spring onion. Let the soup simmer for 10-15 minutes, stirring occasionally.
5. Season and Adjust: Taste the soup. If needed, add a pinch of cumin, cinnamon, ginger powder, and salt and black pepper. Lean slightly towards more black pepper for its mucus-clearing properties.
6. Incorporate Sprouts: Add the super sprouts and super sprout greens to the simmering soup. Cook for a few minutes until slightly softened.
7. Prepare the Garnish: While the soup simmers, shred a carrot, shred the garlic, and chop the remaining spring onion. If using, shred the cucumber and chop the avocado.
