Speed is important for me. When you run a business, a holistic practice and have two teenagers who can eat the house down, there isn’t enough time in the day. I try to come up with quick, healthy, tasty and easy snacks and meals which can all be made in advance and easily thrown together.
This is my version of kimchi cold noodles. These thin white somen noodles are the same ones I use to make a delicious bone broth meal. It cooks in 3 minutes.
Sauce: chopped kimichi, one tablespoon of toasted sesame oil, one teaspoon of soy sauce, one teaspoon of sugar. Mix together in a small bowl.
Noodles: 3 minutes in boiling water, drain and wash in cold water until the noodles are cold. The colder the better.
Mix the noodles and sauce in a bowl and sprinkle toasted sesame seeds.
You can also add thinly chopped cucumbers to make it extra crunchy.
All this could be pre-made, put in separate containers in the fridge and thrown together in a minute!
Tip: for the cold noodles, add a tiny amount of oil so that it would stick together in the container.
