RECIPE NO.3 - FRESH BASIL PESTO

If there's one thing that transforms a simple meal into something special, it's a good homemade pesto. I always have a batch in the fridge or freezer, and once you've made your own you'll never go back to a jar. ๐ŸŒฟ

Just a handful of ingredients: fresh basil, pine nuts or h**p seeds, garlic, lemon juice, parmesan or nutritional yeast for a dairy free version, and the best extra virgin olive oil you can find. That's it.

Blitzed together in minutes, into something that tastes like it took all day.

Stir it through pasta, spread it on toast, dollop it on roasted veg, swirl it into soup, or use it as a dip. It goes with almost everything.

The best bit? It freezes beautifully. Make a big batch and you've got instant flavour on demand all month.

The picture below is my dinner last night. Spaghetti with a large spoonful of my Mediterranean roast veg, pesto, few basil leaves, pine nuts and and a sprinkle of parmesan.

RECIPE NO.2 - MEDITERRANEAN ROAST VEGETABLES

Today I'm sharing another one of my weekly foundations, and this one makes the whole kitchen smell incredible. ๐ŸŒฟ

This is my go-to batch of roasted veg. I use it all week, hot or cold, piled on toasted sourdough, stuffed into wraps with hummus, alongside eggs, stirred through pasta, or just eaten straight from the dish. It's deeply savoury, a little sweet from the balsamic, and the spices take it somewhere really special.

The veg: Aubergine, courgette, red onion, red pepper and garlic

The flavour makers: Extra virgin olive oil, balsamic vinegar, crushed whole coriander, fennel seeds, cumin seeds, salt, and pepper. Sometimes, I add passata for a richer, saucier result.

Method: Chop everything into equal size pieces, toss well with the oil, balsamic and spices, and spread onto a roasting tray. Into a hot oven for 25 minutes. at the halfway point, if you're using passata, add it now and let it cook into the veg for the remaining time. The edges will catch a little. That's the best bit.

Cool and store in the fridge, it keeps beautifully for several days and just gets better as the flavours develop. It freezes well, use within three months and defrost in the fridge.

๐Ÿ’ก Chef's tip: Don't crowd the tray. If the veg is piled up it will steam rather than roast, use two trays if you need to.

Nourishing from the inside out.

If you've ever asked me about nutrition during a session, you'll know how much I believe what we eat is part of the whole picture. Reflexology works with the body's natural balance, and so does food.

So, I'm finally sharing the recipes I use every week. These aren't complicated restaurant dishes, they're my batch-cooked foundations: simple, nutritious building blocks I mix and match.

I am starting with the one thing I genuinely never run out ofโ€ฆ

๐ŸŒฑ RECIPE NO.1 - TOASTED TAMARI SEEDS

These go on everything, salads, soups, roasted veg, hummus, eggs, chicken and fish. Packed with protein, healthy fats, zinc, and magnesium.

You'll need: pumpkin seeds, sunflower seeds, sesame seeds, h**p seeds (optional), tamari (gluten free soy sauce), clove of garlic.

Method:
1. Mix equal parts seeds in a bowl, add a handful of h**p if you have it.
2. Add a generous splash of tamari and a crushed garlic clove. Stir well.
3. Spread on a dry baking tray and toast at 160ยฐC for 15-20 minutes, stirring halfway, until golden and fragrant. Watch them, they catch quickly!
4. Cool completely, then store in a jar. Keeps for a couple of weeks.

๐Ÿ’ก Chef's tip: Don't skip the cooling step as they crisp up as they cool down.

I'm thrilled to be joining a series of outdoor community events over the summer holidays hosted by Nook By Nature , and I'd love for you and your family to come along.
