RECIPE NO.3 - FRESH BASIL PESTO
If there's one thing that transforms a simple meal into something special, it's a good homemade pesto. I always have a batch in the fridge or freezer, and once you've made your own you'll never go back to a jar. ๐ฟ
Just a handful of ingredients: fresh basil, pine nuts or h**p seeds, garlic, lemon juice, parmesan or nutritional yeast for a dairy free version, and the best extra virgin olive oil you can find. That's it.
Blitzed together in minutes, into something that tastes like it took all day.
Stir it through pasta, spread it on toast, dollop it on roasted veg, swirl it into soup, or use it as a dip. It goes with almost everything.
The best bit? It freezes beautifully. Make a big batch and you've got instant flavour on demand all month.
The picture below is my dinner last night. Spaghetti with a large spoonful of my Mediterranean roast veg, pesto, few basil leaves, pine nuts and and a sprinkle of parmesan.
