🍓Strawberry matcha overnight oats🍓

It’s a trending combo for a reason! Sweet berries and earthy green tea are a matcha made in heaven, teaming up with yogurt and oats to make a fantastically filling breakfast

🍓Ingredients🍓

⭐️40g plain porridge oats
⭐️100g chopped fresh strawberries
⭐️200g dairy-free soya yogurt, plain and unsweetened, with added calcium
⭐️1 level tsp maple syrup
⭐️½ tsp matcha powder (if you can’t find it in the supermarket, it’s widely available online and in health food stores)
⭐️Few drops vanilla extract

🍓Method🍓

⭐️Put half the oats in a lidded jar or bowl and top with half the strawberries.

⭐️Mix the yogurt with the maple syrup, matcha and vanilla extract, then spoon half over the oats and strawberries.

⭐️Layer with the rest of the oats, the remaining strawberries and the rest of the yogurt mixture and chill overnight.

⭐️When you’re ready to eat, stir it all together.

If you don’t need this to be vegan, you could use fat-free natural yogurt instead.

Deduct 7 Swips if using porridge oats as a Healthy Extra fibre choice.

🤩Cheat’s tortilla quiche 🤩

We’ve used a wrap instead of pastry to whip up a delicious, weight loss-loving lunch – genius

🥗🧀🥚Ingredients 🥚🧀🥗

⭐️4 medium eggs
⭐️4 tbsp fat-free natural cottage cheese
⭐️40g reduced-fat Cheddar
⭐️5g fresh chives, finely chopped
⭐️1 Slimming World white tortilla wrap (if you’re using a wholemeal wrap and counting the Swips, deduct ½ Swip per serving)
⭐️½ red pepper, deseeded and finely diced
⭐️6 cherry tomatoes, halved
⭐️Mixed leaf salad, to serve

🍽️Method 🍽️

⭐️Preheat your oven to 200°C/fan 180°C/gas 6. With a fork, mix together the eggs, cottage cheese, most of the Cheddar and all of the chives and season well.

⭐️Push the wrap into an 18-20cm ovenproof non-stick dish or frying pan and scatter over the pepper. Pour in the egg mixture, then lay the tomatoes on top. Sprinkle over the remaining Cheddar and add a twist of black pepper. Bake for 25-30 minutes, or until the wrap is golden and the filling doesn’t wobble when you shake the dish.

⭐️Leave to cool for 5 minutes, then remove from the dish and cut into quarters. Divide between two plates (or keep half in the fridge for another time) and serve with the salad.

🍒Bakewell trifles🍒

Did you know that it’s National Bakewell tart day tomorrow (11th August) why not try these out for some Bakewell flavours.
These pretty two-in-one puds come with a big old dollop of nostalgia! The recipe was taken from Slimming Worldʼs Food for the Soul cookbook – itʼs packed with more than 60 deliciously soothing, spirit-lifting dishes

🍒Ingredients 🍒

⭐️2 medium eggs
⭐️1 level tsp sweetener granules
⭐️2 level tbsp self-raising flour
⭐️1 tsp almond extract
⭐️1 level tbsp raspberry jam
⭐️10 fresh cherries, halved and stoned, plus ⭐️4 whole cherries to decorate (or use raspberries)
⭐️11.5g sachet sugar-free raspberry jelly crystals
⭐️4 tbsp plain quark
⭐️250g low-fat custard
⭐️160g pot fat-free no-added sugar cherry yogurt
⭐️10g flaked almonds, toasted, to decorate

🍒Method 🍒

⭐️Get your oven warmed up to 180°C/fan 160°C/gas 4.

⭐️Put the eggs and sweetener in a bowl over a pan of boiling water and whisk with an electric hand whisk for 5 minutes or until the eggs have tripled in volume. Take the bowl off the heat and sieve the flour over the top. Using a metal spoon and a figure-of-eight motion, fold the flour and the almond extract into the mixture, then spoon it into a small non-stick loaf tin. Bake for 10-12 minutes or until golden, then leave to cool in the tin.

⭐️Halve the sponge lengthways and spread with the jam, then cut the sponge into small cubes and arrange in 4 tall glasses. Divide the halved cherries between the glasses, too.

⭐️Make up the jelly with 300ml boiling water and put to one side until it’s cooled to room temperature, making sure it doesn’t start to set. Divide between the glasses, then chill for 1 hour or until completely set.

⭐️When the jelly has set, stir the quark through the custard, spoon the custard over the jelly and top with the yogurt. Add the cherries and evenly scatter over the almonds to serve.

35 minutes plus 1 hour cooling and chilling
Serves 4

🥪Chicken and pesto sandwich🥪

This luxurious sandwich would be a delish lunchtime treat. This lunch idea is from our 250 no fuss meals recipe book that you can pick up in group.

All of our recipes are healthy, delicious and can be easily adapted to suit any need or preference. This recipe has been specially selected as part of our partnership with Diabetes UK.

🥪Ingredients 🥪

⭐️1 level tbsp extra-light mayonnaise
⭐️¼ level tsp Dijon mustard*
⭐️50g fat-free natural cottage cheese
⭐️Small pack fresh basil, chopped
⭐️1 garlic clove, chopped
⭐️4 tbsp vegetable stock, cooled
⭐️1 level tbsp grated fresh Parmesan
⭐️2 cooked skinless and boneless chicken breasts, shredded
⭐️4 slices wholemeal bread from a small 400g loaf
⭐️1 tomato, sliced

🤩Method 🤩

⭐️In a bowl, combine the mayonnaise, mustard, cottage cheese and a little black pepper.

⭐️Blitz the basil, garlic, stock and Parmesan in your food processor until fairly smooth. Transfer the mixture to a bowl, add the chicken and toss well.

⭐️Spread 2 slices of the bread with the cottage cheese mixture, top with the tomato and chicken mixture, then add the remaining bread. Chill until ready to eat.
